Description

This Spanish omelette with peppers is a classic dish that never fails. The combination of tender potatoes, sweet peppers and creamy eggs make it a perfect choice for a quick lunch, a casual dinner or even as part of a tapas. I often prepare it for my friends and it is always a success. It is a very versatile dish, it can be enjoyed hot or cold, and it is ideal for taking on a picnic. In addition, it is a very economical and easy recipe to prepare, perfect for any occasion! The key is to fry the potatoes and peppers over low heat so that they are very tender and tasty.

Ingredients (6 ingredients)

  • 1 pinch Salt
  • 1 chorro Oil
  • 5 piece Potato
  • 7 piece Eggs
  • 0.5 piece Green pepper
  • 0.5 piece Red pepper

Preparation of the potatoes and peppers

Peel the potatoes and cut them into small cubes. Wash them well to remove the starch. Cut the green and red peppers into pieces the same size as the potatoes.

Sauté the potatoes and peppers

Thermomix® Setting

Pour a splash of oil into the Thermomix bowl. Add the potatoes and peppers. Program 25 Min./Varoma/Reverse rotation/Spoon speed. Watch that they do not burn and stir with the spatula if necessary.

Drain and salt

Pour the potatoes and peppers into the basket to drain the excess oil. Place them in a large container and add a pinch of salt. Crush lightly with a fork.

Beat the eggs

In a separate bowl, beat the eggs with a pinch of salt. Reserve in the refrigerator for a few minutes.

Mix the ingredients

When the potatoes and peppers have cooled a little, add the beaten eggs and mix gently with a spatula.

Set the omelette

Pour a little oil into a frying pan and heat over medium heat. Pour the egg, potato and pepper mixture into the pan. Cook over low heat until the omelette is set on one side. Turn it carefully and cook on the other side until golden and cooked to your liking.
