Description

These apple cinnamon cupcakes are a real treat, especially when the days get shorter! I like to bake them when I'm expecting visitors or just need a little treat for myself. The combination of juicy apples and warming cinnamon is simply unbeatable. They are super easy and quick to prepare, so you can enjoy them spontaneously. The cupcakes are light and airy, with a delicate cinnamon note. Perfect for a cozy afternoon!

Ingredients (7 ingredients)

150 g Sugar
2 piece Egg(s)
2 tsp Baking powder
200 g Flour
1.5 tsp Cinnamon
2 piece Apples tart, e.g. Boskoop
130 g Butter

Preparation (8 steps)

Prepare muffin tin

Grease a 12-cup muffin tin or line with paper liners. Perform this step without Thermomix.

Melt butter

Place 130 g butter in the mixing bowl and melt for 3 min./50°C/speed 2.

Prepare butter-sugar mixture

Add melted butter, 140 g sugar, 0.5 tsp cinnamon and 2 eggs to the mixing bowl and whisk for 2 min./speed 3 until fluffy.

Add flour mixture

20 sec/Speed 4

Add 200 g flour and 2 tsp baking powder to the mixing bowl and stir in for 20 sec./speed 4. Use a spatula to scrape everything from the edge.

Fold in apple pieces

Cut an apple into small cubes and fold into the mixture with a wooden spoon. Perform this step without Thermomix.

Pour in and top the dough

Pour the dough into the prepared molds. Also dice the second apple and distribute it on the dough in the molds. Mix 10 g sugar with 1 tsp cinnamon and sprinkle over the muffins. Perform this step without Thermomix.
