Description

This Madrid stew is a comforting spoon dish, perfect for cold winter days. The combination of chickpeas, meat and vegetables creates a tasty and nutritious broth. I have been preparing it for years and it is always a success at home. The key is in the quality of the ingredients and in the cooking time, which allows the flavors to mix perfectly. It is ideal to share with family or friends, and can be accompanied with crusty bread. A traditional dish that never fails!

Ingredients (14 ingredients)

  • 300 grs chickpeas
  • 300 gr beef shin
  • 1 piece fresh chorizo
  • 1 piece onion black pudding
  • 150 grs bacon
  • 80 grs ham
  • 1 hueso ham
  • 80 grs pancetta
  • 100 grs spine
  • 2 piece carrots
  • 0.25 piece cabbage
  • 2 piece potatoes
  • 4 pizcas soup noodles
  • 1 pinch salt

Preparation (7 steps)

Soaking the chickpeas

The night before, place 300 g of chickpeas in a large container and cover with plenty of hot water. Soak for at least 8 hours.

The next day, drain the chickpeas and wash them under the tap. Place the chickpeas in a net for cooking legumes.

Cooking the meat and chickpeas

Add water to the Thermomix bowl until the blades are covered. Add 300 g of beef shin, 150 g of bacon, 80 g of ham, 1 ham bone, 80 g of pancetta, 100 g of spine and the net with the chickpeas. Program 40 Min./Varoma/Reverse direction/Spoon speed.

Cooking the cabbage, chorizo and black pudding

20 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Remove the meat and chickpeas from the Thermomix and set aside. Pour part of the broth into the Thermomix bowl. Add 1/4 of chopped cabbage, 1 fresh chorizo and 1 onion black pudding. Program 20 Min./100°C/Reverse direction/Spoon speed.

Cooking the potatoes and carrots

Add 2 carrots and 2 chopped potatoes to the Thermomix bowl. Program 20 Min./100°C/Reverse direction/Spoon speed.

Preparation of the soup

Thermomix® Setting
4 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Remove the vegetables from the Thermomix and set aside. In the remaining broth, add 4 pinches of soup noodles. Program 4 Min./100°C/Reverse direction/Spoon speed.

Serve the soup as a first course. On a separate tray, place the meat, chickpeas and vegetables. Serve to everyone's liking.
