Description

These marinated zucchini slices are a real treat, especially during grilling season! I often make them as a side dish for grilling or simply as a light appetizer. The zucchini becomes wonderfully aromatic with lemon and herbs thanks to the marinade and gets a slight smoky note on the grill. The recipe is super easy and quick to prepare, ideal for spontaneous barbecue evenings. If you like, you can add some chili for a slight spiciness. Also tastes very delicious cold!

Ingredients (9 ingredients)

  • 500 g Zucchini
  • 1 piece Organic lemon
  • 1 clove Garlic
  • 2 tsp Dried herbs of Provence
  • 1 tsp Salt
  • 1 pinch Black pepper from the mill
  • 1 pinch Sugar
  • 4 tbsp Olive oil
  • to taste Sea salt

Preparation (7 steps)

Prepare zucchini

Wash 500 g zucchini, cut off the ends and pat dry with kitchen paper. Cut the zucchini lengthwise into approx. 1 cm thick slices.

Chop garlic

Peel 1 clove of garlic and put it in the mixing bowl. Chop 3 sec./speed 7.

Prepare marinade

Wash 1 organic lemon thoroughly. Squeeze half of the lemon and add 2 tbsp lemon juice to the mixing bowl. Add 1.5 tsp lemon zest (only the yellow part). Add 4 tbsp olive oil, 2 tsp dried herbs of Provence, 1 tsp salt, 1 pinch of black pepper from the mill and 1 pinch of sugar.

Mix marinade

Mix all ingredients in the mixing bowl for 10 sec./speed 3.

Marinate zucchini

Pour the marinade over the zucchini slices in a flat dish and mix. All zucchini slices should be covered with the marinade. Cover with a kitchen towel and let it steep at room temperature for 20 minutes.

Grill zucchini

Drain the zucchini slices and grill over direct, medium heat on the grill. Depending on the temperature, grill the slices for 3 to 4 minutes on each side.

Serve

To serve, season lightly with sea salt and black pepper from the mill.
