Description

These hearty cheese triangles are an absolute hit at any party! I always like to make them because they are so quick and easy to prepare. The dough is kneaded in the Thermomix® in no time at all and after a short cooling period, the little delicacies can go into the oven. The Gouda provides a spicy taste that is simply irresistible. Perfect as a snack in between or as a side dish to a salad. If you like, you can add some pepper or paprika powder to the dough. Have fun baking!

  • 170 g Flour
  • 100 g Butter
  • 100 g grated Gouda
  • 1 piece Egg yolk

Prepare dough

Put 170 g flour, 100 g butter, 100 g grated Gouda and 1 egg yolk in the mixing bowl and knead for 2 min./kneading stage to a smooth dough.

Cool dough

Remove the dough from the mixing bowl, form a ball, wrap in cling film and refrigerate for 30 minutes.

Roll out and shape the dough

Roll out the dough thinly on a lightly floured work surface. Cut out cheese holes with nozzle attachments or other cookie cutters. Cut the dough into triangular cheese pieces with a pizza cutter.

Bake cheese triangles

Spread the dough pieces on a baking sheet lined with baking paper and bake in a preheated oven at 180°C (top/bottom heat) or 160°C (convection) for 8-10 minutes until golden brown.

About this recipe

These cheese triangles have been an integral part of every party in our family for years. My grandma always baked them, and I took the recipe from her. It's a simple recipe, but the little triangles are always a hit. I still remember trying to get the most with the most "cheese holes" when I was a kid. The ingredient list is short, but each ingredient plays an important role. The flour forms the base of the dough and provides the structure. I prefer to use wheat flour type 405, but spelt flour also works well if you want a slightly nuttier note. The butter, preferably straight from the fridge, makes the dough crumbly and provides the buttery taste. The grated Gouda is of course the star of the recipe. It gives the triangles their hearty, spicy taste. Make sure to use a Gouda with a good aroma, because the taste of the cheese largely determines the end result. The egg yolk serves as a binder and gives the dough a beautiful golden color when baking. The preparation in the Thermomix® is really child's play. It is important that the butter is cold so that the dough does not get too warm. Put all the ingredients in the mixing bowl and let the Thermomix® do the rest. The kneading stage is ideal for obtaining a smooth dough. After kneading, the dough should definitely be chilled. This makes it easier to roll out and keeps its shape during baking. When rolling out the dough, it is important not to roll it out too thickly, otherwise the triangles will become too soft. I like to use cookie cutters in the shape of small circles to make the "cheese holes". This not only makes the triangles look more appealing, but also ensures more even browning. Instead of a pizza cutter, you can of course also use a knife to cut the triangles. For a vegetarian version, you can simply make sure to use a vegetarian Gouda. For a vegan version, you would have to replace butter and egg yolk. There are now good vegan butter alternatives and egg substitutes for this. The cheese triangles taste best fresh from the oven, but they can also be stored well. They stay crispy in an airtight container for a few days. They are ideal as a snack in between, as a side dish to soups or salads or as part of a cheese buffet. Dips such as herb quark, aioli or chutneys go well with them. A glass of wine or a cold beer are also a good accompaniment. You can also prepare them well by preparing the dough the day before and storing it in the refrigerator. Then you will have less stress the next day.
