Description

Baked fennel au gratin is a simple and tasty side dish, perfect to accompany meat or fish dishes. The crispness of the breadcrumbs and the delicate flavor of the fennel combine perfectly, creating a harmony of flavors that will win everyone over. I often prepare them when I have little time available, because they are quick to make and require few ingredients. A delicious idea to get even the little ones to eat vegetables! They can be enriched with Taggiasca olives or capers for an extra touch.

Ingredients (7 ingredients)

  • 2 piece Fennel
  • Breadcrumbs
  • Grated Parmigiano Reggiano
  • Chopped parsley
  • Extra virgin olive oil (EVO)
  • Salt
  • Pepper

Preparation (6 steps)

Fennel preparation

Clean the fennel by removing the outermost and toughest leaves. Cut them into thin slices about 2-3 mm thick. It is important to cut the slices of the same thickness for even cooking. Wash the fennel slices thoroughly and dry them by dabbing them with a clean cloth.

Preparation of the breading

In the Thermomix bowl, pour the breadcrumbs, grated cheese and chopped parsley. Mix for 10 Sec./Stufe 3 to mix the ingredients.

Arrangement in the pan

Grease the bottom of a baking tray with extra virgin olive oil. Sprinkle the bottom with a light layer of the breading prepared in the Thermomix.

Layering the fennel

Arrange the fennel slices in a radial pattern in the pan, overlapping them slightly to form a uniform layer. Season with salt.

Covering with the breading

Add the pepper and cover the fennel slices with the remaining breading prepared in the Thermomix. Drizzle with more extra virgin olive oil.

Gratinating in the oven

Transfer the pan to an oven preheated to 200°C and cook for 10 minutes or until the surface is golden brown.
