Description

This Panna Cotta with Apricot-Rosemary Compote is a wonderfully light and aromatic dessert, perfect for warm summer days. The creamy panna cotta harmonizes perfectly with the fruity sweetness of the apricots and the slightly resinous aroma of the rosemary. I particularly like to make this dessert when I have guests, as it can be prepared well in advance and is always well received. The preparation is straightforward and succeeds with the Thermomix® in no time at all. An absolute highlight for every occasion!

Ingredients (8 ingredients)

  • 4 Blatt Gelatin
  • 0.5 piece Vanilla bean
  • 200 ml Milk
  • 200 ml Whipping cream
  • 80 g Sugar
  • 250 g Apricots
  • 1 Zweig Rosemary
  • 100 ml Water

Preparation (9 steps)

Soak gelatin

Soak 4 sheets of gelatin in cold water according to the package instructions. Perform this step without Thermomix.

Prepare vanilla milk

Thermomix® Setting
8 min/194°F/Speed 2 90

Cut half a vanilla bean lengthwise and scrape out the pulp. Add vanilla pulp, 200 ml milk, 200 ml whipping cream and 50 g sugar to the mixing bowl and heat for 8 min./90°C/speed 2.

Melt gelatin

Thermomix® Setting
20 sec/Speed 3

Remove the mixing bowl from the appliance. Squeeze out the soaked gelatin and add it to the hot vanilla milk in the mixing bowl. Stir for 20 sec./speed 3 until the gelatin is completely melted.

Cool and distribute

Let the panna cotta mixture cool for 15 minutes. Then divide into 4 dessert glasses and refrigerate for at least 3 hours. Perform this step without Thermomix.

Prepare apricots

Blanch 250 g apricots in boiling water for 3 minutes. Drain, rinse with cold water and peel off the skin. Quarter and pit the apricots. Wash 1 sprig of rosemary, shake dry and chop the needles finely. Perform this step without Thermomix.

Prepare caramel

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Add 30 g sugar to the mixing bowl and caramelize for 3 min./Varoma/speed 1 without the measuring cup.

Braise apricots

Thermomix® Setting
8 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Add 100 ml water, the prepared apricots and the chopped rosemary. Simmer covered for 8 min./100°C/gentle stir setting/reverse.

Let cool

Let the apricot-rosemary compote cool. Perform this step without Thermomix.

Serve

Remove the panna cotta from the glasses, turn out onto plates and serve with the apricot-rosemary compote. Perform this step without Thermomix.
