Description

A hearty venison goulash with forest berries, perfect for festive occasions. The recipe is easy to prepare and offers a hearty taste experience. The preparation is done with the Thermomix®, which makes the dish particularly easy to succeed. Ideal as a main course for the cold season. The working time is about 20 minutes, the total preparation time about 110 minutes.

Ingredients (16 ingredients)

  • 200 g Carrot(s)
  • 100 g Celeriac
  • 1 Stück Onion(s)
  • 500 g Goulash of venison
  • 3 EL Oil
  • 2 EL Tomato paste
  • 200 ml Dry red wine
  • 200 ml Game stock or meat broth
  • 1 TL Thyme dried
  • 2 Stück Bay leaves
  • 2 TL Flour
  • 2 EL Lingonberry jam
  • 4 Stück Juniper berry(ies)
  • Salt
  • Pepper
  • Crème fraîche

Preparation (8 steps)

Prepare vegetables

Clean, wash, peel and dice the carrots and celeriac. Peel and finely dice the onion. Wash the venison goulash and pat dry.

Chop onions

Thermomix® Setting

Place diced onions in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 3 tbsp oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sear meat (NOT in the Thermomix!)

Heat oil in a sufficient pot and sear the meat in it in two portions over high heat. Season with salt and pepper, then stir in the tomato paste and sauté briefly. Fry the vegetable and onion cubes with it.

Stew goulash

Thermomix® Setting
90 min/212°F/Speed 1/Linkslauf 100 Reverse

Place seared meat, vegetables and onions in the mixing bowl. Add 200 ml red wine, 200 ml game stock or meat broth, 1 tsp thyme, 2 bay leaves, 4 juniper berries and 1 tbsp lingonberry jam. Cook for 90 min./100°C/speed 1/reverse.

Pass sauce

Remove pieces of meat and keep warm. Pass the vegetables through a sieve and collect the liquid. Put the passed liquid back into the mixing bowl.

Thicken sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Mix 2 tsp flour and 2 tbsp cold water, add to the mixing bowl and simmer for 5 min./100°C/speed 2.

Finish goulash

Thermomix® Setting
2 min/176°F/Speed 1/Linkslauf 80 Reverse

Season with lingonberries, salt and pepper. Add meat again and heat for 2 min./80°C/speed 1/reverse.
