Description

I love aubergines in all variations, but these fans are something special! The aubergines are cut into a fan shape and filled with a delicious mixture of tomatoes, eggs and mozzarella. The whole thing is then baked in an aromatic tomato sauce. The herbs give the dish a wonderful Mediterranean touch. Perfect as a main course or as a side dish for grilling. The preparation takes a little time, but it's definitely worth it! And best of all: it's vegetarian!

Ingredients (13 ingredients)

  • 4 piece small aubergines
  • 1 pinch Salt
  • 4 piece Eggs (size M)
  • 250 g Light-Mozzarella
  • 2 piece Tomatoes
  • 4 Stiele Lovage
  • 4 Stiele Basil
  • 4 Stiele Thyme
  • 1 piece Onion
  • 1 tbsp Olive oil
  • 2 Dosen chunky Tomatoes (à 400 g)
  • 100 g Cooking cream (7 % fat)
  • 1 pinch Pepper

Preparation (7 steps)

Cook eggs

Thermomix® Setting
8 min/Varoma/Speed 1 Varoma

Add 500 ml water to the mixing bowl. Place eggs in the simmering basket and cook for 8 min./Varoma/speed 1. Then quench the eggs, peel and cut into slices.

Chop onion

Thermomix® Setting

Peel and quarter the onion and place in the mixing bowl. Chop 3 sec./speed 5.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare tomato sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add chunky tomatoes, chopped herbs and cooking cream to the mixing bowl. Season with salt and pepper and simmer for 5 min./100°C/speed 2.

Prepare aubergines

Wash the aubergines and cut lengthwise into a fan shape at intervals of approx. 2 cm. Sprinkle cut surfaces with salt.

Layer casserole

Pour approx. 2/3 of the tomato sauce into a baking dish (approx. 24 x 31 cm). Place aubergines side by side on the sauce. Fill incisions with tomato slices, egg slices and mozzarella slices. Drizzle remaining sauce over the top.

Bake aubergines

Place the baking dish in the preheated oven and bake for 25-30 minutes.
