Description

This aromatic roasted vegetable dish is a simple and quick recipe that is perfect as a main course. With fresh baby potatoes, bell peppers, zucchini, mushrooms, cherry tomatoes, red onion, garlic, and feta cheese, it's a vegetarian dish full of flavor. The preparation in the Thermomix® makes the preparation easier and ensures an even result. Ideal for a healthy and delicious meal.

Ingredients (8 ingredients)

  • 1 Pck. Spice mix for roasted vegetables
  • 500 g Baby potatoes
  • 500 g Vegetables (e.g. bell peppers, zucchini, mushrooms)
  • 150 g Cherry tomatoes
  • 1 Red onion
  • 6 Garlic cloves
  • 100 g Feta cheese
  • Olive oil

Preparation (5 steps)

Chop onion and garlic

Thermomix® Setting

Peel and quarter the red onion. Peel the garlic cloves. Place the onion and garlic in the mixing bowl and chop for 3 sec/speed 5. Use the spatula to scrape everything down from the edge.

Prepare vegetables

Wash and halve or quarter the baby potatoes, depending on their size. Clean the bell peppers, zucchini and mushrooms and cut into bite-sized pieces. Halve the cherry tomatoes.

Mix vegetables

Place the baby potatoes, bell peppers, zucchini, mushrooms and cherry tomatoes in a large bowl. Add the chopped onion and garlic from the mixing bowl. Add the spice mix for roasted vegetables and olive oil and mix everything well so that the vegetables are evenly coated.

Bake roasted vegetables

Spread the vegetables on a baking sheet and bake in a preheated oven at 200°C top/bottom heat for approx. 30 minutes, until the vegetables are cooked and lightly browned.

Add feta

Crumble the feta cheese and sprinkle it over the vegetables for the last 5 minutes of baking time. Finish baking the roasted vegetables with the feta cheese.
