Description

This dish is a real treat for the colder days! The colorful oven vegetables with onions, tomatoes and zucchini are perfectly rounded off by the aromatic herbs thyme and rosemary. The sweet potato mash provides a pleasant sweetness and makes the dish a complete meal. If you like it vegan, you can simply use a plant-based cream based on soy or rice. I like to make the dish when I invite friends, as it can be prepared well and is always well received. An absolute favorite recipe that simply tastes delicious!

Ingredients (13 ingredients)

  • 6 piece small Onions
  • 6 piece Tomatoes
  • 4 piece small Zucchini
  • 2 clove Garlic
  • 6 tbsp Olive oil
  • 1 tbsp strong Vegetable broth (Instant, if necessary gluten-free)
  • 8 Zweig Thyme
  • 2 Zweig Rosemary
  • to taste Table salt
  • to taste Pepper f. t. Mill
  • 1000 g Sweet potatoes
  • 6 tbsp Plant cream (e.g. soy or rice)
  • 1 Bd. smooth Parsley

Preparation (9 steps)

Prepare onions and garlic

Peel 6 small onions, quarter them and put them in the mixing bowl. Chop 3 sec./level 5. Peel 2 cloves of garlic and add. Chop 3 sec./level 7. Use the spatula to push everything down from the edge.

Sauté vegetables

Thermomix® Setting

Add 6 tbsp olive oil and sauté for 3 min./120°C/level 1.

Add vegetable broth and herbs

Thermomix® Setting

Add 1 tbsp vegetable broth, 8 sprigs of thyme (leaves plucked), 2 sprigs of rosemary (needles plucked) and mix for 5 sec./level 4.

Prepare and mix vegetables

Wash 6 tomatoes, quarter and put in a large bowl. Wash 4 small zucchini, clean, cut into slices at an angle and also put in the bowl. Add the vegetables from the mixing bowl to the rest of the vegetables in the bowl and mix well. Season with salt and pepper.

Bake vegetables

Spread the vegetables in a wide, ovenproof dish and bake in a preheated oven at 200°C convection for approx. 15 minutes. Turn on the grill and brown the vegetables for a few more minutes.

Prepare sweet potatoes

Wash, peel and roughly dice 1000 g sweet potatoes.

Cook sweet potatoes

Put the sweet potato cubes with a little water and salt into the mixing bowl. Cook for 20 min./100°C/level 1.

Prepare sweet potato mash

Drain the sweet potatoes and put them back in the mixing bowl. Add 6 tbsp plant cream and stir for 20 sec./level 4. Season with salt and pepper.

Arrange

Wash 1 bunch of smooth parsley, dry, chop without coarse stems and sprinkle over the vegetables. Arrange the vegetables together with the sweet potato mash.
