Description

This hearty bean and potato stew is real soul food! With fresh beans, spicy bacon and a creamy cream topping, it warms you from the inside and tastes great to the whole family. I especially like to make it in autumn when the beans are fresh from the field. Preparation in the Thermomix® is super easy and quick, so you can conjure up a delicious and healthy dish on the table even on stressful days. An absolute must for all stew lovers!

Ingredients (15 ingredients)

  • 500 g Green beans
  • 500 g Potato(es), waxy
  • 3 piece Carrot(s)
  • 1 piece Onion(s), large
  • 4 cm Ginger
  • 250 g Diced bacon
  • 1 tbsp Olive oil
  • 1 tbsp Vegetable broth, instant
  • 0.5 container Sweet cream
  • 0.5 Liter Water
  • Pepper, black from the mill
  • Cayenne pepper
  • 1 tbsp Coriander powder
  • 1 Prise(n) Sugar
  • Herbs, dried (marjoram, thyme, oregano)

Preparation (5 steps)

Chop onion

Peel, quarter and place the onion in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onion and bacon

Add the olive oil and diced bacon to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add vegetables and sauté

Add the diced potatoes, carrots and halved beans to the mixing bowl and sauté for another 3 min./120°C/speed 1.

Add the water and vegetable broth to the mixing bowl. Peel the ginger, grate finely and add to the mixing bowl together with the dried herbs, pepper, cayenne pepper, coriander powder and sugar. Cook for 20 min./100°C/speed 1.

This hearty bean and potato stew is a dish that reminds me of my childhood. My grandma had a huge vegetable garden, and in autumn there was stew in various variations almost every day. This one, with the fresh beans and potatoes, was one of my favorites. I have adapted and refined the recipe over the years until it was the way I like it best today. The ingredients all play an important role in the taste and texture of the stew. The green beans, preferably fresh from the market or from your own garden, bring a crunchy freshness and a slightly tart taste. Waxy potatoes ensure a smooth consistency without falling apart. Carrots add a subtle sweetness and give the stew color. The diced bacon provides a smoky spice and a hearty note. The ginger, finely grated, brings a pleasant spiciness and warmth to the stew. The dried herbs, a mixture of marjoram, thyme and oregano, give the dish a Mediterranean touch. And the cream at the end makes the stew wonderfully creamy and round. When preparing in the Thermomix®, it is important not to chop the onions too finely, as they can burn otherwise. The temperature of 120°C when sautéing is ideal for optimally releasing the aromas of onions and bacon. Make sure to cut the potatoes and carrots into approximately equal-sized cubes so that they cook evenly. The reverse rotation when stirring in the cream prevents the ingredients from overcooking and the stew from getting an unsightly consistency. If you want to prepare the stew vegetarian or vegan, you can simply omit the bacon or replace it with smoked tofu. Instead of cream, you can also use plant-based cream or cashew cream. For a vegan version, it is important to also check the vegetable broth for its ingredients. You can vary the spices as you like. Caraway, paprika powder or smoked paprika powder also go very well with this stew. The bean and potato stew is best served hot, straight from the Thermomix®. Fresh farmhouse bread or a crispy baguette goes well with it. If you like, you can refine the stew with a dollop of crème fraîche or a spoonful of yogurt. Chopped parsley or chives provide a fresh note. The stew can be prepared well in advance and stored in the refrigerator. It tastes even better the next day, as the flavors have then really blended together. To warm it up, you can simply heat it in a pot or in the microwave. You can also freeze it in portions and thaw it as needed.
