Description

This rustic potato soup with mushrooms is a comforting dish, ideal for cold days. The recipe, inspired by traditional cuisine, is simple to prepare with the Thermomix®. Potatoes and vegetables combine with forest mushrooms to create a deep, earthy flavor. A touch of sour cream when serving gives it a creamy and delicious finish. Ingredients (12 ingredients)

  • 2 piece carrots
  • 1 piece celery
  • 4 piece potatoes
  • Forest mushrooms or mushrooms
  • 1 piece large onion
  • 1 litro hot water
  • 50 gr Butter
  • 2 tbsp flour
  • 2 clove garlic
  • 1 cube broth concentrate
  • Salt, cumin, marjoram, 2 tablespoons red pepper
  • sour cream or Greek yogurt

Preparation (5 steps)

Chop onion and sauté

Thermomix® Setting
3 min/248°F/Speed 1 120

Introduce 1 large onion into the glass and chop 3 sec./speed 5. Add 50 g of butter and 1 pinch of cumin. Sauté 3 Min./120°C/speed 1.

Add vegetables and water

Peel and chop 2 carrots, 1 stalk of celery and 4 potatoes. Add to the glass together with 1 liter of hot water. Stir with the spatula.

Cook vegetables and mushrooms

Thermomix® Setting
25 min/212°F/Speed 1 100

Add salt to taste and 1 cube broth concentrate. Incorporate chopped forest mushrooms or mushrooms. Cook 25 Min./100°C/speed 1 or until vegetables are almost tender.

Add spices and toasted flour

Thermomix® Setting
5 min/194°F/Speed 1 90

Add marjoram and 2 tablespoons of red pepper. Toast 2-3 tablespoons of flour in a separate pan until lightly golden. Incorporate the toasted flour into the glass together with 2 crushed garlic cloves. Cook 5 Min./90°C/speed 1, making sure it doesn't stick to the bottom.

Serve with sour cream

Serve the hot soup with a tablespoon of sour cream or Greek yogurt on top. Optionally, decorate with chopped dill.
