Description

This juicy yeast cake with cherries and crunchy marzipan crumble is an absolute delight! I particularly like to bake it in the summer when the cherries are fresh from the tree. The slightly sour taste of the cherries harmonizes perfectly with the sweetness of the yeast dough and the aromatic marzipan crumble. The preparation is a bit more complex, but the result is worth every effort. The cake is ideal for birthdays, coffee parties or simply as a sweet reward in between. It can also be prepared well and tastes delicious both warm and cold.

Ingredients (15 ingredients)

  • 150 ml Milk
  • 30 g Yeast
  • 550 g Flour
  • 2 piece Eggs (size M)
  • 150 g Sugar
  • 150 g Butter
  • 1 pinch Salt
  • 1.75 kg Cherries
  • 650 ml Cherry Nectar
  • 200 ml Grenadine (Pomegranate Syrup)
  • 2 Pck. Vanilla Sugar
  • 90 g Cornstarch
  • 50 g Marzipan Raw Material
  • 500 g Cream Quark (40% fat)
  • Mint for Decoration

Heat milk and dissolve yeast

Put 150 ml milk in the mixing bowl and heat for 2 min./37°C/speed 2. Add 30 g yeast and dissolve for 10 sec./speed 3.

Prepare yeast dough

Thermomix® Setting
2 min/Kneading speed

Put 550 g flour, 2 eggs, 150 g sugar, 150 g butter in pieces and 1 pinch of salt in the mixing bowl and knead for 2 min./kneading level to a smooth dough. Transfer the dough to a bowl, cover and let rise in a warm place for 30–40 minutes.

Prepare cherries

Wash, stem and pit 1 ¾ kg cherries. Set cherries aside.

Prepare cherry compote

Put 650 ml cherry nectar, 200 ml grenadine and 1 packet vanilla sugar in the mixing bowl and bring to the boil for 8 min./100°C/speed 1.

Add cherries and thicken

3 min/212°F/Linkslauf Speed 1 100 Reverse

Put the prepared cherries in the mixing bowl and simmer for 3 min./100°C/reverse rotation speed 1. Stir 90 g cornstarch and 150 ml cherry nectar.

Thicken compote

Thermomix® Setting
1 min/212°F/Linkslauf Speed 1 100 Reverse

Add the stirred cornstarch to the mixing bowl and stir in for 1 min./100°C/reverse rotation speed 1. Transfer the compote to a bowl, cover directly with foil and let cool.

Prepare marzipan crumble

Thermomix® Setting
20 sec/Speed 4

Grate 50 g marzipan raw material coarsely. Put 100 g butter in pieces, 1 pinch of salt, 60 g sugar and 175 g flour in the mixing bowl and process to crumble for 20 sec./speed 4. Transfer the crumble to a bowl.

Roll out yeast dough

Knead the yeast dough again briefly and roll out thinly on a greased baking sheet of the oven (32 x 39 cm) dusted with flour. Press up at the edge. Prick the bottom several times with a fork.

Prepare cheese mixture

Put 500 g cream quark, 1 packet vanilla sugar, 40 g sugar, 1 egg and 15 g starch in the mixing bowl and mix for 20 sec./speed 3.

Top the cake

Stir the cooled cherry compote until smooth and spread on the yeast dough. Put the cheese mixture on top in dabs. Sprinkle with the marzipan crumble.

Bake cake

Bake the cake in a preheated oven (electric oven: 200 °C/ convection: 175 °C/ gas: level 3) on the lower rack for 35-40 minutes.

Let the cake cool and decorate

Let the cake cool and decorate with mint as desired.
