Description

This juicy yeast cake with cherries and crunchy marzipan streusels is an absolute delight! I especially like to bake it in the summer when the cherries are fresh from the tree. The slightly sour taste of the cherries harmonizes perfectly with the sweetness of the yeast dough and the aromatic marzipan streusels. The preparation is a bit more complex, but the result is worth every effort. The cake is ideal for birthdays, coffee parties or simply as a sweet reward in between. It can also be prepared well and tastes delicious both warm and cold.

Ingredients (15 ingredients)

  • 150 ml Milk
  • 30 g Yeast
  • 550 g Flour
  • 2 piece Eggs (Gr. M)
  • 150 g Sugar
  • 150 g Butter
  • 1 pinch Salt
  • 1.75 kg Cherries
  • 650 ml Cherry nectar
  • 200 ml Grenadine (Pomegranate syrup)
  • 2 Pck. Vanilla sugar
  • 90 g Cornstarch
  • 50 g Marzipan raw material
  • 500 g Cream curd (40% fat)
  • Mint for decoration

Heat milk and dissolve yeast

Put 150 ml milk into the mixing bowl and heat for 2 min./37°C/speed 2. Add 30 g yeast and dissolve for 10 sec./speed 3.

Prepare yeast dough

Put 550 g flour, 2 eggs, 150 g sugar, 150 g butter in pieces and 1 pinch of salt into the mixing bowl and knead for 2 min./kneading stage to a smooth dough. Transfer the dough to a bowl, cover and let rise in a warm place for 30–40 minutes.

Prepare cherries

Wash, stem and pit 1 ¾ kg cherries. Set cherries aside.

Prepare cherry compote

Put 650 ml cherry nectar, 200 ml grenadine and 1 packet of vanilla sugar into the mixing bowl and bring to the boil for 8 min./100°C/speed 1.

Add cherries and thicken

3 min/212°F/Linkslauf Speed 1 100 Reverse

Put the prepared cherries into the mixing bowl and simmer for 3 min./100°C/reverse rotation speed 1. Stir 90 g cornstarch and 150 ml cherry nectar.

Thicken compote

Add the stirred cornstarch to the mixing bowl and stir in for 1 min./100°C/reverse rotation speed 1. Transfer the compote to a bowl, cover directly with film and let cool.

Prepare marzipan streusels

20 sec/Speed 4

Grate 50 g marzipan raw material coarsely. Put 100 g butter in pieces, 1 pinch of salt, 60 g sugar and 175 g flour into the mixing bowl and process for 20 sec./speed 4 to streusels. Transfer the streusels to a bowl.

Roll out yeast dough

Knead the yeast dough again briefly and roll out thinly on a greased baking sheet of the oven (32 x 39 cm) dusted with flour. Push up at the edge. Prick the bottom several times with a fork.

Prepare cheese mixture

Put 500 g cream curd, 1 packet of vanilla sugar, 40 g sugar, 1 egg and 15 g starch into the mixing bowl and mix for 20 sec./speed 3.

Cover the cake

Stir the cooled cherry compote until smooth and spread on the yeast dough. Put the cheese mixture in dabs on top. Sprinkle with the marzipan streusels.

Bake the cake

Bake the cake in the preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) on the lower rack for 35-40 minutes.

Let the cake cool and decorate with mint as desired.

This yeast cake with cherries and marzipan streusels is a piece of my childhood. My grandma had a huge cherry tree in the garden, and in the summer there was nothing better than picking cherries with her and then baking this cake. The scent that then wafted through the house is unforgettable. The ingredients all play an important role in the taste and texture of the cake. The yeast makes the dough loose and airy, while the butter makes it juicy. The cherries bring a fruity acidity into play, which harmonizes perfectly with the sweetness of the sugar. The cherry nectar and grenadine enhance the cherry aroma and give the compote a beautiful color. The marzipan streusels are the icing on the cake: they are crunchy, aromatic and give the cake a special touch. The curd in the cheese mixture provides a creamy consistency and a slightly sour contrast to the sweet compote. With the Thermomix® workflow, it is important to follow the order of the steps exactly. Especially when heating the milk for the yeast dough, make sure that it does not get too hot, as this can kill the yeast. When preparing the cherry compote, the reverse rotation is important so that the cherries do not overcook. The marzipan streusels are best when the butter is cold. The streusels can also be prepared the day before and stored in the refrigerator. If you want to prepare the cake vegetarian, you can simply make sure that the ingredients used are vegetarian. For a vegan version, you would have to replace the eggs and butter in the dough as well as the curd in the cheese mixture. There are now many good alternatives for this. For example, you could use soy yogurt instead of curd and margarine instead of butter. Instead of eggs, you can use applesauce or flaxseed flour. You can also vary the taste of the cake with other spices. Cinnamon, cardamom or tonka bean go perfectly with cherries and marzipan. The yeast cake with cherries and marzipan streusels tastes best lukewarm, but it is also a treat when cold. A scoop of vanilla ice cream or a dollop of whipped cream goes perfectly with it. If you like it fruitier, you can also garnish the cake with fresh cherries or raspberries. The cake can be prepared well in advance. The yeast dough can be prepared the day before and left to rise in the refrigerator. The cherry compote and the marzipan streusels can also be prepared in advance. The finished cake can be stored in the refrigerator. It will keep there for about 2-3 days.
