Description

This dish is a real summer hit! The zucchini-pasta, also called Zoodles, are super quick to prepare and a great, light alternative to traditional pasta. The combination with the baked tomatoes, olives and the spicy sheep's cheese is simply unbeatable. I like to make the recipe when I need to be quick and still want something healthy on the table. The preparation in the Thermomix® makes it even easier and faster. Perfect for a light lunch or as a side dish for grilling. If you like, you can add fresh herbs such as basil or oregano.

Ingredients (8 ingredients)

  • 8 piece small Tomatoes
  • Salt
  • Pepper
  • 1 clove Garlic
  • 6 piece black Olives
  • 100 g Feta
  • 5 tbsp Olive oil
  • 2 piece medium-sized Zucchini

Preparation (7 steps)

Chop Garlic

Thermomix® Setting

Put a clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down from the edge with the spatula.

Prepare and season tomatoes

Halve 8 small tomatoes and place in a baking dish with the cut side up. Season with salt, pepper and the chopped garlic.

Prepare and distribute topping

Quarter 6 black olives and crumble 100 g of sheep's cheese. Spread both over the tomatoes. Drizzle with 4 tablespoons of olive oil.

Bake tomatoes

Place the baking dish in the preheated oven (200 °C, top/bottom heat) and bake for 10 minutes.

Prepare zucchini noodles

In the meantime, use a spiral cutter to turn the 2 medium-sized zucchini into noodles.

Fry zucchini noodles

Heat 1 tablespoon of olive oil in a pan and fry the zucchini noodles for about 2 minutes, seasoning with salt and pepper.

Serve

Serve the zucchini noodles with the baked tomatoes, olives and sheep's cheese.
