Description

This Malaga fish soup, also known as Gazpachuelo, is a traditional dish that warms the soul, especially in the colder months. The base is a homemade fish stock, enriched with potatoes and a touch of mayonnaise that gives it a unique creaminess. I have been preparing it for years and it is always a success at home. Fresh hake and prawns give it a delicious flavor, and the touch of lemon enhances all the aromas. It is perfect for a family meal or a special dinner. Go ahead and try it, you will love it! You can add a little chopped fresh parsley when serving to give it a touch of color and freshness.

Ingredients (11 ingredients)

  • 500 g Potato
  • 1.5 kg Hake
  • 1 piece Bay leaf
  • 1 bunch Fresh parsley
  • 3 l Water
  • 8 piece Prawns
  • 1 piece Egg
  • 1 piece Lemon
  • 100 ml Extra virgin olive oil
  • 100 ml Sunflower oil
  • 1 pinch Salt

Preparation (8 steps)

Initial preparation of the hake

Ask at the fishmonger's to clean the hake, separating the loins from the spine and head. Request that they remove the skin from the loins and, if possible, the bones. If not, clean the hake at home carefully.

Preparation of the potatoes and prawns

Peel and cut the potatoes into pieces of equal size. Peel the prawns and reserve the bodies.

Preparation of the base stock

Place the spine and head of the hake in the Thermomix bowl, along with the prawn shells, potato pieces, a bay leaf and a bunch of fresh parsley. Add 3 liters of water and a pinch of salt. Program 30 Min./100°C/Stufe 1.

Strain the stock and cook the potatoes

Strain the stock with a fine-mesh strainer and pour it back into the Thermomix bowl. Add the cooked potatoes from the stock. Program 10 Min./100°C/Stufe 1.

Preparation of the mayonnaise

In a separate bowl, prepare a homemade mayonnaise with one egg, 100 ml of extra virgin olive oil, 100 ml of sunflower oil, the juice of one lemon and a pinch of salt. Beat until a homogeneous mayonnaise is obtained.

Tempering the mayonnaise

Remove a couple of ladles of the hot stock from the Thermomix. Gradually add the hot stock to the mayonnaise, stirring gently to prevent it from curdling. Repeat the operation until all the reserved stock is incorporated.

Add the fish and prawns

Add the hake cut into small pieces and the prawn bodies to the Thermomix bowl. Stir gently with the spatula. Program 2 Min./90°C/Linkslauf Stufe 1.

Incorporate the mayonnaise and serve

30 sec/194°F/Linkslauf Speed 1 90 Reverse

Slowly add the mayonnaise mixture to the Thermomix bowl, stirring gently with the spatula to prevent it from curdling. Program 30 Sek./90°C/Linkslauf Stufe 1. Serve immediately and garnish with a little chopped fresh parsley.
