Description
This spinach zucchini soup is a light and healthy dish, ideal for a quick meal. With few ingredients and simple preparation, the soup is quickly prepared in the Thermomix®. It is vegetarian and can be easily made vegan. Perfect for a light meal or as an appetizer. The recipe is designed for 3 servings.
Ingredients (8 ingredients)

1 piece small Onion

20 g Olive oil

300 g Zucchini (coarse pieces)

200 g Leaf spinach

700 g Vegetable broth

1 pinch Lemon zest (optional)

Pepper
Preparation (4 steps)
Chop onion
Add 1 small onion to the mixing bowl and chop for 5 sec./speed 5.
Sauté onion
Add 20 g olive oil and sauté for 3 min./120°C/speed 1.
Cook soup
Add 300 g zucchini (coarse pieces), 200 g leaf spinach and 700 g vegetable broth and cook for 15 min./100°C/speed 1.
Purée and season soup
Season with 1 pinch of lemon zest, salt and pepper and purée for 1 min./speed 10.
