Description

This poor soup, a classic of Italian cuisine, is a simple dish but rich in flavor. Perfect for cool evenings, acquasale is a warm and comforting cuddle. Stale bread, fresh eggs and a touch of chili pepper create a harmony of flavors that wins you over at the first taste. I often prepare it when I need a quick and nutritious meal, and I must say it is always a success! Grated salted ricotta adds a savory note that enhances the taste of all the ingredients. Try it, you won't regret it!

Ingredients (8 ingredients)

  • Stale bread
  • 4 piece Eggs
  • 1 piece Onions
  • 1 piece Hot red chili pepper
  • Salted ricotta
  • Extra virgin olive oil
  • Salt
  • 1 l Lukewarm water

Preparation (3 steps)

Onion and chili pepper in the Thermomix

Put 1 thinly sliced onion and 1 chopped hot red chili pepper in the bowl. Add 30 ml of extra virgin olive oil and sauté for 3 Min./120°C/Stufe 1.

Addition of water and eggs

Thermomix® Setting
20 sec/Speed 1/Linkslauf Reverse

Pour 1 liter of lukewarm water into the bowl and bring to a boil for 5 Min./100°C/Stufe 1. Add 4 eggs and mix gently with the spatula for 20 Sek./Stufe 1/Linkslauf.

Plating

Distribute the crumbled stale bread in 4 bowls. Pour the hot soup over the bread and sprinkle with plenty of grated salted ricotta. Serve immediately.
