Description

This simple plum compote in the style of the house succeeds in the Thermomix® in just 20 minutes. Ripe plums, sugar, cinnamon and lemon juice are processed into a fruity dessert or a delicious side dish. The recipe is vegetarian and yields 4 servings. Ideal for quick, seasonal cuisine in summer and autumn.

Ingredients (4 ingredients)

  • 600 g ripe, fresh plums
  • 2 EL Sugar
  • 0.5 TL Cinnamon - ground
  • 2 Spritzer Lemon juice

Preparation (5 steps)

Prepare plums

Wash the plums (600 g) and pat them dry. Cut around them with a sharp knife, halve them and remove the stones. Set the prepared plum halves aside.

Caramelise sugar

3 min/248°F/Speed 1 120

Put the sugar (2 tbsp) in the mixing bowl and caramelise for 3 mins./120°C/speed 1 without the measuring cup. Observe the caramelisation process and, if necessary, push it away from the edge with the spatula.

Sauté plums

5 min/212°F/Linkslauf Speed 1 100 Reverse

Put the prepared plum halves in the mixing bowl and sauté for 5 mins./100°C/reverse rotation speed 1 until juice forms. Support with the spatula as needed.

Roast plums

Thermomix® Setting
8 min/194°F/Linkslauf Speed 1 90 Reverse

Add the cinnamon (½ tsp) to the plums in the mixing bowl and simmer for a further 8 mins./90°C/reverse rotation speed 1 with the lid on. Stir occasionally with the spatula to prevent sticking. The roaster is ready when the skin of the fruit curls up and they themselves begin to fall apart.

Season and Serve

Thermomix® Setting
10 sec/Speed 1

Add the lemon juice (2 squirts) to the plum roaster in the mixing bowl and stir in for 10 sec./speed 1. Serve the finished plum roaster warm or cold, for example with plum dumplings or Kaiserschmarrn.
