Description

This Murcian salad is a traditional Spanish dish, perfect for hot summer days. The combination of juicy tomatoes, fresh spring onion, boiled egg and canned tuna creates an explosion of flavours in every bite. I have been preparing it for years and it is always a success at home. It is ideal to serve as a starter or as a light main course. It is also very easy to prepare and can be ready in no time. Don't forget to accompany it with good bread to dip in the delicious juice of the tomatoes! A simple, nutritious and full of Mediterranean flavour recipe.

Ingredients (7 ingredients)

  • 700 g Tomatoes in natural preserve
  • 1 piece Large spring onion
  • 2 piece Egg
  • 150 g Tuna in preserve
  • Black cuquillo olives
  • Extra virgin olive oil
  • Salt

Preparation (4 steps)

Cook the eggs

Thermomix® Setting
10 min/212°F/Velocidad 4 100

Place 500 ml of water in the Thermomix bowl. Insert the eggs into the simmering basket and programme 10 Min./100°C/Speed 4. Once cooked, remove the eggs and let cool. Peel and slice.

Prepare the spring onion

Cut 1 large spring onion into julienne strips. Place the spring onion in a deep plate with cold water and a pinch of salt. Let it rest for 15 minutes and then rinse well. This step softens the flavour of the spring onion.

Crush the tomatoes

Open 700 g of tomatoes in natural preserve and gently drain them over a colander. Place the drained tomatoes in a salad bowl. Crush the tomatoes to taste with a fork. Some whole pieces can be left.

Mix and dress

Open 150 g of tuna in preserve, drain it and flake it lightly with a fork. Add the tuna, sliced eggs and spring onion to the salad bowl with the tomatoes. Add the black cuquillo olives. Dress with extra virgin olive oil and salt to taste. Mix everything well, taste and adjust the seasoning. Add some more olives on top.
