These Beetroot Pickled Eggs are a delightful twist on a classic appetizer! I've been making these for Easter brunch for years, and they're always a hit. The beets impart a beautiful color and a slightly sweet and tangy flavor to the eggs. The pickling process takes a few days, but the result is well worth the wait. They're perfect as a snack, appetizer, or as part of a festive spread. The creamy, deviled filling complements the pickled egg perfectly.   • 450 g sliced beets, drained with liquid reserved
  • 200 g white sugar
  • 170 ml distilled white vinegar
  • 10 diente whole cloves
  • 1.5 cdta salt
  • 0.25 cdta ground black pepper
  • 2 unidad bay leaves
  • 12 unidad hard-boiled eggs, peeled
  • 57 g mayonnaise
  • 1 cdta sweet pickle relish
  • 1 cdta prepared yellow mustard

Measure 240 ml beet juice from the reserved juice into the mixing bowl.

Combine Pickling Ingredients

Add 200 g sugar, 170 ml white vinegar, 10 cloves, 1.5 tsp salt, 0.25 tsp ground black pepper, and 2 bay leaves to the mixing bowl.

Pickle Eggs and Beets

Place the beets and peeled hard-boiled eggs into a large bowl. Pour the hot beet juice mixture over the beets and eggs. Ensure the eggs are submerged. Refrigerate for 3 days (72 hours).

Drain Pickled Eggs and Beets

Drain the pickled eggs and beets, discarding the pickling liquid.

Cut each egg in half lengthwise and scoop the yolks into the mixing bowl. Add 57 g mayonnaise, 1 tsp sweet pickle relish, and 1 tsp prepared yellow mustard.
