Description

This dish is a wonderful combination of forest and sea! The fettuccine are prepared with fresh mushrooms and a selection of seafood such as mussels and shrimp. I love how the earthy flavors of the mushrooms combine with the freshness of the sea. It is a relatively quick dish, perfect for a dinner with friends or family. Served with fresh parsley, it is a real treat. A touch of white wine rounds off the dish perfectly. Try it, it tastes simply delicious!

Ingredients (11 ingredients)

  • 320 g fettuccine
  • 200 g mussels _weight from cleaned_
  • 200 g clams _weight from cleaned_
  • 150 g shrimp _weight from cleaned_
  • 200 g mushrooms _to taste (champignon, cardoncelli, porcini etc.)_
  • 2 spicchi garlic
  • 50 g white wine
  • olive oil
  • pepper
  • fine salt
  • parsley

Preparation (10 steps)

Cooking mussels and clams

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Place cleaned mussels and clams in the Varoma. Pour 500 ml of water into the mixing bowl, place the Varoma on top and cook for 5 min./Varoma/speed 1 until the shells open.

Preparation of the molluscs

Remove the mussels from the shells and set aside in a bowl.

Filter the cooking liquid

Strain the cooking liquid from the mussels through a sieve and set aside.

Sauté the garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula. Add olive oil and sauté for 3 min./120°C/speed 1.

Cook the mushrooms

Thermomix® Setting
5 min/248°F/Speed 1 120

Add mushrooms to the mixing bowl, add salt and pepper and cook for 5 min./120°C/speed 1.

Deglaze with wine

Thermomix® Setting
2 min/212°F/Speed 1 100

Pour white wine into the mixing bowl and reduce for 2 min./100°C/speed 1 without the measuring cup. Remove garlic.

Cook the fettuccine

Meanwhile, bring water to a boil in a separate pot, salt it and cook the fettuccine in it.

Add the seafood

2 min/212°F/Linkslauf Speed 1 100 Reverse

Add mussels, clams and shrimp to the mushrooms in the mixing bowl and heat for 2 min./100°C/Reverse speed 1.

Mix the pasta

Thermomix® Setting
2 min/212°F/Linkslauf Speed 1 100 Reverse

Drain the cooked fettuccine and add to the mixing bowl together with the filtered cooking liquid. Mix for 2 min./100°C/Reverse speed 1 until a creamy sauce is formed.

Serve

Arrange the pasta on plates and sprinkle with chopped parsley.
