Description

This French onion soup is a true classic and wonderfully warms you from the inside on cold days. I especially like to make it in autumn and winter when the onions are in season. The sweetness of the caramelized onions, combined with the hearty broth and the au gratin cheese, is simply unbeatable. A perfect dish for a cozy dinner or as a festive appetizer. If you like, you can add a shot of cognac or sherry. And the best part: with the Thermomix® preparation is very easy!

Ingredients (8 ingredients)

  • 500 g Onion(s)
  • 2 clove Garlic
  • 40 g Butter
  • 20 g Salt and Pepper black
  • 1 Liter Meat broth
  • 0.25 Liter White wine
  • 100 g Hard cheese grated
  • 4 slice White bread or Toast bread

Preparation (5 steps)

Prepare onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Add 500 g onions to the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Sauté the onions

Thermomix® Setting

Put 40 g butter in the mixing bowl and sauté for 3 min./120°C/speed 1.

Cook soup

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 1 liter of meat broth and 0.25 liters of white wine to the mixing bowl. Add 20 g salt and pepper and cook for 20 min./100°C/speed 1.

Toast white bread and prepare soup

Remove the crust from 4 slices of white bread or toast bread and toast vigorously. Place in a fireproof dish.

Bake soup

Pour the soup over the toasted bread slices and sprinkle with 100 g of grated hard cheese. Place immediately in the preheated oven on the top shelf (230 degrees, gas mark 6) and bake until the cheese is golden brown.
