Description

This potato vegetable casserole is a hearty and filling dish that is perfect for the whole family. I like to make it with fresh carrots and aromatic Roma tomatoes, which give the casserole a fruity note. The potatoes are parboiled until firm to the bite and then covered with a creamy cream sauce. If you like, you can also add ground beef to make the casserole even more hearty. Baked with cheese and baked until golden brown, this casserole is an absolute comfort food that tastes especially good on colder days. A green salad goes perfectly with it.

Ingredients (14 ingredients)

  • 2 kg Potatoes, predominantly firm cooking
  • 2 tbsp Salt
  • 5 piece Carrots
  • 7 piece Roma tomatoes
  • 1 piece Onions
  • 2 clove Garlic
  • 1 Schuss Rapeseed oil or sunflower oil
  • 1 etwas Nutmeg
  • 400 g Whipping cream
  • 1 etwas Pepper
  • 2 tbsp Herbs of Provence
  • 1 tsp Paprika powder, hot
  • 200 g Emmentaler or Gouda, grated
  • 400 g Ground beef

Preparation (7 steps)

Prepare potatoes

Peel 2 kg of potatoes and cut into thin slices. Cover with water in a pot and add 2 tbsp of salt. The potatoes are now not cooked in the Thermomix, but on the stove, as this is more efficient for the quantity.

Prepare carrots

Peel 5 carrots and cut into thin slices. The carrots are now not steamed in the Thermomix, but on the stove, as this is more efficient for the quantity.

Chop onion and garlic

Halve 1 onion and put 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 5.

Sauté onion and garlic

Thermomix® Setting

Add a dash of rapeseed oil or sunflower oil and sauté for 3 min./120°C/speed 1.

Prepare cream sauce

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 400 g whipping cream, some pepper, 2 tbsp Herbs of Provence, 1 tsp paprika powder (hot) and optionally some nutmeg to the mixing bowl. Simmer for 5 min./90°C/speed 2.

Layer casserole

Fill the pre-cooked potato slices into a casserole dish (approx. 30 x 22 x 6 cm). Pour the cream sauce over it. Spread 7 diced Roma tomatoes and 200 g grated Emmentaler or Gouda over it.

Bake casserole

Bake the casserole in a preheated oven at 180-200°C top/bottom heat for 20-30 minutes until the cheese is golden brown.
