Description

This raspberry mascarpone dream is an absolute highlight for every dessert lover! The combination of creamy mascarpone, fresh curd cheese and fruity raspberries is simply unbeatable. I especially like to make this dessert in the summer when raspberries are in season. It is super easy and quick to prepare and can be prepared wonderfully. Perfect for birthdays, brunch or just as a little reward. If you like it a little sweeter, you can of course add a little more sugar. A truly delicious and refreshing dessert!

Ingredients (6 ingredients)

  • 200 g Whipped cream
  • 150 container Plain yogurt
  • 250 g Mascarpone
  • 500 g Low-fat curd cheese
  • 500 g Raspberries, frozen
  • 100 g Sugar

Whip cream

Thermomix® Setting

Put 200 g whipped cream into the mixing bowl and whip stiff with the butterfly 2 min./level 3.5. Transfer and set aside.

Prepare curd cheese mixture

Put 2 cups of plain yogurt à 150 g, 250 g mascarpone, 500 g low-fat curd cheese and 100 g sugar into the mixing bowl and stir for 20 sec./level 4.

Fold in cream

Carefully fold the previously whipped cream into the curd cheese mixture with a spatula.

Layers

Layer 500 g frozen raspberries and the curd cheese mixture alternately in a glass bowl.

Let the layered dessert sit in the refrigerator for at least 3 hours.

This raspberry mascarpone dream is a dessert that has a tradition in our family. My grandma always made it for birthdays, but without Thermomix®. I have adapted her recipe a bit and used the Thermomix® to simplify the preparation and make the consistency even creamier. It always reminds me of carefree summer days and family celebrations. The list of ingredients may seem simple at first glance, but each component plays an important role. The whipped cream provides an airy lightness that blends wonderfully with the creamy mascarpone. Mascarpone, an Italian cream cheese, brings a subtle sweetness and a velvety texture to the dessert. The plain yogurt contributes a pleasant acidity that refreshes the whole and balances the sweetness. The low-fat curd provides additional creaminess and makes the dessert a little lighter at the same time. The frozen raspberries are the icing on the cake: they bring a fruity acidity and a slightly frozen texture that forms a nice contrast to the creamy mass. The sugar is of course used to regulate the sweetness, but here less is often more. When preparing in the Thermomix®, it is important not to whip the cream for too long, otherwise it can become buttery. Watch the process carefully and stop the Thermomix® as soon as the cream is stiff. Be careful when folding the cream into the curd cheese mixture. Use a spatula and carefully fold in the cream so as not to lose the airiness. Layering the raspberries and the curd cheese mixture is a matter of taste. I personally like it when the raspberries are evenly distributed, so that you have some of the fruity acidity in every layer. There are many variations. The recipe is suitable for a vegetarian version anyway. For a vegan version, you can replace the cream, mascarpone and curd cheese with plant-based alternatives. Make sure that the plant-based cream can be whipped well and that the plant-based mascarpone and curd cheese have a similar consistency to the original products. Instead of raspberries, other fruits can also be used, such as strawberries, blueberries or mixed berries. A touch of vanilla or lemon zest in the curd cheese mixture gives the dessert an extra touch. Serve the raspberry mascarpone dream well chilled. It goes perfectly with fresh mint leaves or a chocolate lattice. A glass of Prosecco or a fruity white wine rounds off the taste experience. The raspberry mascarpone dream can be prepared well in advance and stored in the refrigerator. It can be kept there for about 2-3 days. The longer it sits, the more intense the flavors become.
