Description

This cool plum soup is a wonderfully refreshing dessert, especially on warm summer days. The sweetness of the plums harmonizes perfectly with the light acidity and fine spices. The meringue dumplings, tender and airy, are the icing on the cake and make the soup something special. I like to make it when I have guests because it can be prepared well in advance and looks great. The preparation is a bit more complex, but the result is worth it! A great vegetarian dessert for festive occasions.

Ingredients (8 ingredients)

  • 500 g Summer plums
  • 4 tbsp Sugar
  • 1 piece Vanilla pod
  • 1 piece Star anise
  • 500 ml Plum juice
  • 15 g Cornstarch
  • 1 piece Egg white (Gr. M)
  • Lemon juice

Preparation (10 steps)

Prepare plums

Wash 500 g summer plums, halve and pit. Cut the plums into wedges and set aside.

Prepare caramel

Put 4 tbsp sugar and 1 tbsp water in the mixing bowl and caramelize for 5 min./120°C/speed 1.

Add spices

Cut open 1 vanilla pod and scrape out the pulp. Add vanilla pulp and 1 star anise to the mixing bowl and simmer for 1 min./120°C/speed 1.

Deglaze and simmer soup

Pour 500 ml plum juice into the mixing bowl and simmer for 2 min./100°C/speed 2 until the caramel has dissolved.

Add and cook plums

Add the prepared plum wedges to the mixing bowl and cook for 3 min./100°C/speed 1 in reverse rotation.

Thicken soup

Mix 15 g cornstarch with a little water until smooth. Add the mixed starch to the mixing bowl and bring to a boil for 1 min./100°C/speed 2 to thicken the soup slightly.

Cool soup

Pour the soup into a large bowl and let it cool for about 30 minutes. Then refrigerate for at least 30 minutes.

Whisk meringue

3 min 30 sec/Speed 3.5

Put 1 egg white (Gr. M) with the butterfly whisk in the mixing bowl and whisk until stiff for 3 min./speed 3.5. Let 1 tbsp sugar trickle in and add a few drops of lemon juice. Beat for another 30 sec./speed 3.5.

Cook snow dumplings

Bring water to a boil in a saucepan. Use 2 teaspoons to scoop small dumplings from the meringue, place in the water and cook in the closed saucepan for 4-5 minutes in the residual heat. Remove the dumplings with a slotted spoon, drain and let cool.

Arrange

Arrange the cold plum soup in chilled bowls and garnish with the snow dumplings. Serve immediately.
