Description

This Mediterranean summer pasta is an absolute highlight on warm days! The fresh ingredients such as zucchini and tomatoes, combined with garlic and white wine, give the dish a light and fruity note. I especially like to make this pasta when I need something quick, because it's on the table in just 20 minutes. The shaved Parmesan provides that certain something and makes the pasta a real treat. A dash of cream makes the sauce nice and creamy. Perfect for a relaxed lunch or dinner!

Ingredients (10 ingredients)

  • 500 g Pasta of your choice (e.g. Spaghetti)
  • 200 g Salt water
  • 1 piece Zucchini
  • 3 piece Tomato(es)
  • 2 clove Garlic
  • 50 ml White wine
  • 1 container Whipped cream
  • 100 g Parmesan freshly shaved
  • Herbs e.g. Oregano, Basil etc.
  • Olive oil for frying

Preparation (8 steps)

Cook noodles

Add 500 g pasta of your choice (e.g. Spaghetti) and 200 g salt water to the mixing bowl and cook al dente according to the package instructions. The cooking time depends on the pasta chosen. After cooking, drain the pasta and set aside.

Prepare vegetables

Prepare 1 zucchini, 3 medium-sized tomatoes and 2 cloves of garlic. Cut the zucchini into slices, quarter the tomatoes and finely chop the garlic.

Chop garlic

Place the chopped garlic in the mixing bowl and chop with a little olive oil for 3 sec./speed 7.

Sauté vegetables

Add the zucchini to the mixing bowl and sauté with the garlic and olive oil for 5 min./120°C/speed 1.

Deglaze with white wine

Thermomix® Setting

Add 50 ml white wine to the mixing bowl and let it reduce for 1 min./100°C/speed 1 without the measuring cup.

Add cream and Parmesan

3 min/140°F/Gentle stir speed 60

Add 1 carton of whipped cream and 70 g Parmesan (freshly shaved) to the mixing bowl and stir for 3 min./60°C/gentle stir setting until the Parmesan is melted.

Add tomatoes and herbs

1 min/122°F/Gentle stir speed 50 Reverse

Add the tomato quarters and herbs as needed (e.g. oregano, basil etc.) to the mixing bowl and stir in for 1 min./50°C/gentle stir setting.

1 min/122°F/Gentle stir speed 50 Reverse

Add the pasta to the mixing bowl and fold in for 1 min./50°C/gentle stir setting. Serve with the remaining Parmesan.
