Description

This recipe for fluffy buns is a classic of Russian cuisine. With the help of the Thermomix®, the yeast dough is particularly easy to make. The buns are ideal for breakfast or as a sweet snack. Preparation takes about 2.5 hours, including the rising time of the dough. The recipe is designed for a large quantity of buns.

Ingredients (8 ingredients)

  • 1000 g Flour
  • 10 g Yeast
  • 100 ml Vegetable oil
  • 50 g Butter
  • 225 g Sugar
  • 1 TL Salt
  • 1 Stück Egg
  • 650 ml Milk

Heat the milk

Add 650 ml milk to the mixing bowl and heat for 3 min./37°C/speed 1.

Dissolve yeast and sugar

Add 10 g yeast and some of the sugar (from the 200-250g sugar) to the warmed milk in the mixing bowl and mix for 2 min./37°C/speed 2.

Add liquid ingredients

Add 1 egg, 100 ml vegetable oil and 50 g melted butter to the mixing bowl and mix for 20 sec./speed 3.

Add flour, sugar and salt

Add 1 kg flour, the remaining sugar (from the 200-250g sugar) and 1 level teaspoon of salt to the mixing bowl.

Knead the dough

Knead the dough for 3 min./kneading stage.

Let the dough rise

Remove the dough from the mixing bowl, place in a bowl and let rise in a warm place for about 1 to 1.5 hours, until it has doubled in volume.

Shape the buns

After rising, portion the dough on a floured work surface and shape into buns (as shown in the picture as knots or snails).

Brush and bake the buns

If desired, brush the shaped buns with egg yolk and sprinkle with poppy seeds. Bake in a preheated oven at approx. 180°C until golden brown.
