Description

This homemade pizza recipe is a delightful twist on the classic Italian favorite. The combination of fresh rocket, salty capers, and a hint of garlic in the passata sauce creates a unique and flavorful experience. I've been making this pizza for years, and it's always a hit! The dough is easy to prepare in the Thermomix®, and the toppings can be customized to your liking. Perfect for a casual weeknight dinner or a fun weekend gathering. It's a lactose-free option that doesn't compromise on taste. Enjoy!

Ingredients (11 ingredients)

  • 100 ml passata
  • 1 clove garlic
  • 0.5 tsp dried oregano
  • 50 g Parmigiano-Reggiano
  • capers
  • rocket
  • 1 tbsp extra virgin olive oil
  • 300 g strong white bread flour
  • 7 g sachet fast action yeast
  • 1 tsp fine sea salt
  • 2 tbsp olive oil

Preparation (7 steps)

Prepare the pizza dough

Thermomix® Setting
2 min/Kneading mode

Add 300g strong white bread flour, 7g sachet fast action yeast, 1 tsp fine sea salt, and 2 tbsp olive oil to the mixing bowl. Add 200ml warm water. Knead for 2 minutes/Kneading mode.

Let the dough rise

Remove the dough from the mixing bowl, form into a ball, and place in an oiled bowl. Cover with a tea towel and let rise in a warm place for about 1 hour, or until doubled in size.

Preheat oven

Preheat the oven to 240°C/220°C fan/gas 9 and place a baking sheet inside to heat up.

Divide and roll out the dough

Knock the dough back into the bowl, then divide into two balls. Press the dough balls into flat rounds on a floured work surface, then roll into 5mm thick pizza bases, about 25cm wide. Transfer to two sheets of baking parchment.

Prepare the sauce

Add 1 garlic clove to the mixing bowl and chop for 3 seconds/Stufe 7. Add 100ml passata and ½ tsp dried oregano. Mix for 5 seconds/Stufe 3.

Assemble and bake the pizza

Spoon the sauce over the bases, leaving a 1cm border. Scatter with 50g finely grated cheese and a small handful of capers. Transfer the pizzas, cooking one at a time, onto the preheated tray with the baking parchment. Bake for 10 mins until the crusts are golden and crisp. Repeat with the remaining pizza.

Add toppings and serve

Top the pizzas with a handful of rocket and drizzle over 1 tbsp extra virgin olive oil to serve.
