Description

These turkey rolls in sage-balsamic sauce are a real treat! I like to make them when I want to cook something special without spending hours in the kitchen. The combination of tender turkey, spicy Parma ham and aromatic sage is simply unbeatable. Add a creamy balsamic sauce and fresh tagliatelle - perfect for a festive meal or a cozy evening with friends. The dish is relatively quick to prepare and tastes simply delicious! If you like, you can add some grated cheese over the pasta.

Ingredients (13 ingredients)

  • 4 Stiele Sage
  • 4 piece Turkey cutlet
  • Salt
  • Pepper
  • 4 tsp Pesto
  • 4 Scheiben Parma ham
  • 4 piece Sun-dried tomatoes in oil
  • 1 tbsp Olive oil
  • 5 tbsp Balsamic vinegar
  • 200 ml Vegetable broth
  • 400 g Tagliatelle noodles
  • 1 tsp Cornstarch
  • 1 pinch Sugar

Preparation (8 steps)

Prepare sage

Thermomix® Setting

Wash 4 sprigs of sage, shake dry and pluck the leaves from the stems. Set half of the leaves aside. Put the other half into the mixing bowl and chop for 3 seconds/speed 8. Transfer and set aside.

Prepare turkey rolls

Wash 4 turkey cutlets (approx. 150 g each), pat dry and season with salt and pepper. Spread 1 teaspoon of pesto on each and top with 1 slice of Parma ham, 1 sun-dried tomato in oil and the chopped sage. Roll up and secure with toothpicks or kitchen twine.

Fry turkey rolls

Heat 1 tablespoon of olive oil in a pan. Fry the turkey rolls all over for about 4 minutes.

Prepare sauce

Place the fried turkey rolls in the mixing bowl. Add 5 tablespoons of balsamic vinegar and 200 ml of vegetable broth. Cook for 10 min./100°C/speed 1.

Cook noodles

While the rolls are cooking, prepare 400 g of tagliatelle noodles in boiling salted water according to the package instructions.

Thicken sauce

Thermomix® Setting
3 min/212°F/Speed 2 100

Remove the turkey rolls from the mixing bowl and keep warm. Stir 1 teaspoon of cornstarch in 4 tablespoons of water until smooth and add to the mixing bowl. Cook for 3 min./100°C/speed 2.

Season sauce

Thermomix® Setting
1 min/Speed 3

Season the sauce with 1 pinch of sugar, salt and pepper. Stir for 1 min./speed 3.

Arrange

Cut the turkey rolls into slices. Drain the noodles. Arrange the noodles, rolls and sauce on plates. Garnish with the remaining sage leaves.
