Description

This hearty Parmesan cream is a real treat and a great alternative to classic crème brûlée. The intense Parmesan flavor harmonizes wonderfully with the creamy texture. I especially like to make it as an appetizer for festive occasions such as Christmas or New Year's Eve. The preparation is a bit more complex, but the result is worth it! It tastes best warm, straight from the oven. A tip: If you like it a little spicier, you can add a pinch of nutmeg.

Ingredients (9 ingredients)

  • 60 g Parmesan
  • 1 piece small Shallot
  • 1 tsp Butter
  • 200 ml White wine, dry
  • 250 ml Cream
  • 2 piece Eggs, size M
  • 150 g Creme fraiche
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Grate Parmesan and prepare shallot

Place 60 g Parmesan in the mixing bowl and grate for 10 sec/speed 10. Transfer and set aside. Peel and quarter 1 small shallot. Place shallots in the mixing bowl and chop for 3 sec/speed 5. Scrape down the sides with the spatula.

Sauté shallots

Add 1 tsp butter to the shallots in the mixing bowl and sauté for 3 min/120°C/speed 1.

Reduce white wine

Thermomix® Setting
8 min/Varoma/Speed 1 Varoma

Add 200 ml dry white wine to the shallots in the mixing bowl and cook for 8 min/Varoma/speed 1 without the measuring cup.

Add cream and Parmesan

5 min/194°F/Speed 2 90

Add 250 ml cream and half of the grated Parmesan (30 g) to the mixing bowl and bring to a boil for 5 min/90°C/speed 2.

Prepare cream

Whisk 2 eggs (size M) and 150 g creme fraiche in a separate bowl. Pour in the Parmesan cream mixture from the mixing bowl and mix everything well. Season with salt and pepper.

Distribute and bake cream

Divide the cream into 6 small, ovenproof bowls and sprinkle with the remaining grated Parmesan (30 g). Place the bowls in the baking tray of the oven, pour in water to a height of 2 cm and bake in the lower third of the oven preheated to 160°C top/bottom heat for approx. 40 minutes.
