Description

These salty shortbread with basil are a little marvel to accompany your aperitifs or your gourmet breaks. I love the simplicity of this recipe, which highlights the fresh scent of basil and the subtle taste of olives. The dough is easy to make with the Thermomix®, and baking in the oven gives crispy and golden biscuits to perfection. It is a recipe that I often make, because it is quick, economical and always appreciated by my guests. Feel free to vary the herbs according to your desires, such as chives or thyme. These shortbread are perfect for a picnic, brunch or just snacking in front of the TV. A true Mediterranean delight!

Ingredients (8 ingredients)

  • 50 g Butter
  • 50 g Flour
  • 10 g Cornstarch
  • 2 piece Egg white(s)
  • 40 g Pitted olives
  • 3 c Basil
  • Salt
  • Pepper

Preparation (8 steps)

Preheat the oven

Preheat the oven to 180°C (th.6).

Chop the basil

Wash, dry and pick 3 teaspoons of basil. Put the leaves in the Thermomix bowl and chop finely for 3 Sek./Stufe 8.

Chop the olives

Thermomix® Setting
2 sec/Speed 5

Add 40g of pitted olives to the Thermomix bowl and chop coarsely for 2 Sek./Stufe 5.

Prepare the dough

Thermomix® Setting
10 sec/Speed 4

Whisk 2 egg whites with a fork in a bowl. Add 50g of cornstarch and 50g of flour to the Thermomix bowl. Mix for 10 Sek./Stufe 4.

Incorporate the ingredients

Thermomix® Setting
20 sec/Speed 3

Add the whisked egg whites, 50g of melted butter, the chopped olives and the chopped basil to the Thermomix bowl. Salt and pepper. Mix well for 20 Sek./Stufe 3.

Shape the crackers

Oil a baking sheet. Make small rounds of dough on top using a small spoon.

Bake the crackers

Bake and cook for 10 to 12 minutes.

Cool and serve

Remove from the oven, peel the crackers off the plate and let cool before serving.
