Description

These grilled sardines with red peppers are a summer delight! I have been preparing this recipe for years, and it is always a sensation. Fresh sardines, stuffed with grilled peppers and flavored with herbs, are a tasty and colorful dish. The touch of cayenne pepper brings a subtle warmth that blends perfectly with the freshness of the lemon. This is an ideal recipe for a sunny lunch or a light dinner. Easy to prepare, it is perfect for impressing your guests without spending hours in the kitchen. Serve them with cucumber and celery for a touch of freshness.

Ingredients (13 ingredients)

  • 12 piece Fresh sardine(s)
  • 3 piece Red pepper(s)
  • 1 dl Olive oil
  • 1 piece Cucumber(s)
  • 24 piece Black olives
  • 1 branche(s) Celery stick(s)
  • 3 brin Thyme
  • 2 feuilles Bay leaf
  • 3 piece Lemon(s)
  • 1 pinch Cayenne powder
  • to taste Salt
  • to taste Pepper
  • Toothpicks

Preparation (9 steps)

Preparation of sardines

Empty the 12 fresh sardines, wash them carefully and wipe them with paper towels. Cut them at the back to remove the backbone. Set aside.

Preparation of peppers

Preheat the oven to 200°C. Grill the 3 red peppers in the oven until the skin blackens. Remove from the oven, place in a plastic bag for a few minutes to make peeling easier. Peel them and cut them into strips.

Stuffing the sardines

Stuff the sardines with the grilled pepper strips. Keep them tightly closed with toothpicks. Place them on an oven dish.

Preparation of the marinade

Thermomix® Setting

Put 3 sprigs of thyme and 2 bay leaves in the Thermomix bowl. Chop finely for 5 Sek./Stufe 7.

Adding oil and lemon

Thermomix® Setting
10 sec/Speed 3

Add 1 dl of olive oil and the juice of 3 lemons to the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Seasoning the marinade

Thermomix® Setting
5 sec/Speed 2

Salt, pepper and add 1 pinch of Cayenne powder to the Thermomix bowl. Mix for 5 Sek./Stufe 2.

Coating the sardines

Pour this preparation over the sardines arranged on the dish.

Baking in the oven

Bake the sardines in a preheated oven at 280°C for 15 minutes.

Finish and serve

After cooking, remove the toothpicks. Sprinkle the sardines with 4 tablespoons of lemon juice. Serve the lukewarm sardines decorated with 24 black olives, lemon slices and serve with 1 cucumber and 1 stalk of chopped celery.
