Description

This dish of spaghetti with toasted breadcrumbs and anchovies is a classic of Sicilian cuisine, revisited to be easily prepared with the Thermomix®. The breadcrumbs, toasted with garlic and chilli pepper, give a unique crunchiness and an intense flavour. The anchovies, melted in oil, add a savoury touch that goes perfectly with the pasta. It is a simple dish, quick to prepare and perfect for a Last-Minute dinner. I often prepare it when I have little time but want something tasty and satisfying. A real comfort food!

  • Chili pepper
  • Garlic
  • Spaghetti
  • Anchovy fillets
  • Extra virgin olive oil (EVO)
  • Chopped parsley

Preparation of the breadcrumbs

Dry breadcrumbs in the bowl and chop for 10 Sec./speed 10. Transfer to a bowl and set aside.

Toasting of the breadcrumbs

Pour extra virgin olive oil into the bowl, add chilli pepper and a clove of garlic. Sauté for 3 Min./120°C/speed 1. Remove the garlic.

Addition of the breadcrumbs and toasting

Add the breadcrumbs to the bowl, a pinch of salt and toast for 2 Min./120°C/speed 2, stirring with the spatula.

Preparation of the sauce

Pour extra virgin olive oil into the bowl, add a clove of garlic and the anchovy fillets. Sauté for 1 Min./120°C/speed 1.

Addition of cooking water

Add 2 ladles of pasta cooking water to the bowl and mix for 10 Sec./speed 1.

Cooking the pasta

Cook the spaghetti in plenty of salted water. Drain it 2 minutes before the end of cooking and pour it into the bowl with the sauce. Add 2-3 ladles of cooking water and cook for 2 Min./100°C/Reverse Stufe 1.

Final creaming

Add half of the toasted breadcrumbs to the bowl and mix for 10 Sec./Reverse Stufe 1. If necessary, add a ladle of cooking water.

Plating

Plate the spaghetti and finish the dish by adding a sprinkling of toasted breadcrumbs and chopped parsley.
