Description

This stir-fried rice with beef and vegetables is a one-dish meal, perfect for a quick and tasty dinner. I often prepare it when I need to empty the fridge, because it adapts to any type of vegetable. The secret is to cook the rice so that it is well separated and stir-fry the vegetables over high heat to keep them crunchy. A touch of fresh spring onion at the end gives an irresistible aroma. Ideal for an informal dinner or a quick lunch, this dish is a real comfort food!

Ingredients (9 ingredients)

  • 300 g Basmati rice
  • 200 g Beef meat
  • 1 piece Red bell pepper
  • 1 piece Zucchini
  • 1 piece Carrot
  • 1 piece Spring onion
  • 30 ml Seed oil
  • 1 pinch Salt
  • 1 pinch Black pepper

Preparation (6 steps)

Rice cooking

Thermomix® Setting
14 min/212°F/Speed 4 100

Cook 300g of basmati rice by absorption. Put the rice in the basket and wash it under running water. Transfer the rice in the basket to the Mixtopf, add 600ml of water and cook for 14 Min./100°C/Stufe 4. Remove the basket with the help of the spatula and let the rice cool.

Preparation of the vegetables

Wash and dice 1 red bell pepper, 1 zucchini and 1 carrot. Finely chop 1 spring onion, separating the white part from the green part.

Sautéing the vegetables

Thermomix® Setting
5 min/248°F/Speed 1 120

Pour 30ml of seed oil into the Mixtopf. Add the white part of the spring onion and the diced vegetables. Sauté for 5 Min./120°C/Stufe 1.

Meat cooking

In a separate pan, cook 200g of diced beef meat with a pinch of salt and black pepper. Cook until golden brown.

Combine all the ingredients

Thermomix® Setting
3 min/212°F/Speed 2/Linkslauf 100 Reverse

Add the cooked meat to the Mixtopf with the vegetables. Add the cooked rice and stir-fry everything for 3 Min./100°C/Stufe 2/Linkslauf.

Serve

Serve the stir-fried rice hot, garnished with the finely chopped green part of the spring onion.
