Description

This chickpea stew with octopus is a comforting dish, perfect for cold days. Ingredients (14 ingredients)

  • 1 piece Medium spring onion
  • 1 piece Small Italian green pepper
  • 0.5 piece Red bell pepper
  • 10 ml Pulp of choricero pepper or ñora
  • 5 ml Tomato concentrate (optional)
  • 400 g Cooked chickpeas
  • 1 cucharadita Sweet paprika
  • Spicy paprika
  • 2 piece Cooked octopus (legs)
  • 60 ml White wine
  • Broth from octopus, chickpeas, vegetables or water
  • Dried thyme
  • Extra virgin olive oil
  • Salt

Preparation of the vegetables

Wash and cut the medium spring onion, the small Italian green pepper and half a red bell pepper into medium pieces. Introduce the vegetables into the Thermomix glass and crush for 5 seconds/Speed 5. Remove and reserve.

Sauté of the vegetables

Add a splash of extra virgin olive oil to the Thermomix glass. Incorporate the spring onion, the green pepper and the reserved red pepper. Sauté for 8 minutes/120°C/Speed 1.

Add pepper pulp and tomato

5 min/212°F/Speed 1 100

Add 10 ml of pulp of choricero pepper or ñora and 5 ml of tomato concentrate (optional) to the glass. Stir well with the spatula and cook for 5 minutes/100°C/Speed 1.

Incorporate chickpeas and paprika

Add 400 g of cooked chickpeas (rinsed and drained), 1 teaspoon of sweet paprika and spicy paprika to taste to the glass. Stir with the spatula and cook for 2 minutes/100°C/Speed 1.

Add octopus and white wine

3 min/Varoma/Speed 1 Varoma

Add 2 cooked octopus legs cut into bite-sized slices and 60 ml of white wine to the glass. Stir with the spatula and cook for 3 minutes/Varoma/Speed 1, without the beaker so that the alcohol evaporates.

Final cooking of the stew

Add broth from octopus, chickpeas, vegetables or water to cover the ingredients in the glass. Add dried thyme to taste and salt. Cook for 20 minutes/98°C/Speed 1. Adjust the liquid level if necessary during cooking.

Let the stew rest for a few minutes before serving. Serve hot.
