Description

This salad with turkey and citrus fruits is an absolute highlight for warm days! The combination of juicy oranges and grapefruit, tender turkey and crunchy lettuce is simply unbeatable. I especially like to make it in the summer when the citrus fruits are really ripe. The dish is quick to prepare and is perfect as a light lunch or as a starter for grilling. If you like, you can add a few fresh figs - that gives the salad a special touch. A dash of sherry vinegar in the dressing rounds the whole thing off perfectly. Simply delicious!

Ingredients (8 ingredients)

  • 600 g Salad Mixed
  • 1 piece Grapefruit Pink
  • 3 piece Orange
  • 500 g Turkey Cutlet
  • 2 tbsp Flour
  • 4 tbsp Olive oil
  • 2 tbsp Vinegar White wine vinegar
  • 1 tbsp Vinegar Sherry vinegar

Preparation (5 steps)

Prepare salad

Wash 600 g salad mixed (e.g. Lollo rosso, Frisee, lamb's lettuce, chicory, radicchio, etc.) and pluck into bite-sized pieces. Place in a bowl and set aside.

Fillet citrus fruits

Fillet 1 pink grapefruit and 2 oranges (collect the escaping juice). Set the fillets aside. Save the collected juice.

Prepare orange juice

Squeeze the remaining orange and add the juice to the collected juice from the filleted fruit.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Put the orange juice, 2 tbsp white wine vinegar, 1 tbsp sherry vinegar, salt and pepper into the mixing bowl and mix for 10 sec./speed 3.

Emulsify dressing

Thermomix® Setting
20 sec/Speed 3

Add 4 tbsp olive oil and emulsify for 20 sec./speed 3.
