Description

These savoury beef pies are a real treat, perfect for a comforting meal on a cold day. The rich beef filling is encased in a flaky pastry and served with a vibrant parsley sauce. I've been making this recipe for years, and it's always a hit with family and friends. The combination of the hearty beef, buttery pastry, and fresh parsley sauce is simply delicious. While the pastry needs some chilling time, the active cooking time is manageable, making it a great option for a weekend dinner. Feel free to add other vegetables to the beef filling, such as carrots or mushrooms, for extra flavour and nutrients.

Ingredients (15 ingredients)

  • 1 tbsp sunflower oil
  • 500 g minced beef
  • 400 ml beef stock
  • 1 tbsp Worcestershire sauce
  • 1 pinch ground white pepper
  • mashed potatoes
  • 200 g plain flour
  • 100 g chilled butter
  • 2 tbsp milk
  • 250 g self-raising flour
  • 125 g beef or vegetable suet
  • 30 g butter
  • 30 g plain flour
  • 500 ml warm fish or vegetable stock
  • 30 g parsley

Preparation (9 steps)

Prepare the Beef Filling

Heat the oil in a large frying pan over a high heat. Cook the minced beef for 5-10 mins, stirring regularly, until browned. Add the beef stock and Worcestershire sauce and season with salt and the white pepper. Simmer for 10-15 mins until the stock has reduced by half. Leave to cool.

Make the Shortcrust Pastry

Add the plain flour and chilled butter to the mixing bowl. Add ¼ tsp fine salt. Process for 20 Sec./Stufe 4. Add 2 tbsp milk and process for 10 Sec./Stufe 3. Remove the dough, wrap in cling film and chill for at least 30 mins.

Combine Dough

Add 2 tbsp milk and process for 10 Sec./Stufe 3. Remove the dough, wrap in cling film and chill for at least 30 mins.

Prepare the Suet Pastry

Mix together the self-raising flour, suet and ¼ tsp of fine salt in a large bowl. Add enough cold water (around 100-120ml), to form a soft dough. Roll out the suet pastry on a floured work surface, then cut into 4 rectangles and use to line individual pie dishes. Spoon in the cooled minced beef filling and brush the rims with water.

Make the Parsley Sauce

Add the butter to the mixing bowl and melt for 2 Min./50°C/Stufe 1. Add the plain flour and cook for 2 Min./100°C/Stufe 2. Gradually add the warm fish or vegetable stock and cook for 5 Min./100°C/Stufe 3. Stir in the parsley for 10 Sec./Stufe 2.

Cook the Parsley Sauce

Add the plain flour and cook for 2 Min./100°C/Stufe 2.

Finish the Parsley Sauce

Thermomix® Setting
5 min/212°F/Speed 3 100

Gradually add the warm fish or vegetable stock and cook for 5 Min./100°C/Stufe 3. Stir in the parsley for 10 Sec./Stufe 2.

Stir in the parsley for 10 Sec./Stufe 2.

Bake the Pies

Heat the oven to 220C/200C fan/gas 7 and put a large baking tray inside. Bake the pies until golden brown.
