Description

These vegetarian pea bites are a delicious and nutritious option for the whole family. Pea flour gives them an attractive green colour, perfect for children! They are easily prepared with the Thermomix® and can be adapted to your tastes, using chickpea or lentil flour. The touch of Provençal herbs and cumin gives them an irresistible flavour. Ideal as an aperitif, main course or to take on a picnic. Go ahead and try this versatile and healthy recipe! You can serve them with a fresh salad or your favourite sauce. They are also perfect for freezing and always having on hand.

Ingredients (7 ingredients)

  • 1 cup pea flour
  • 2 cucharadas soperas Provençal herbs
  • 1 cucharada postre ground paprika
  • 1 cucharada postre cumin
  • 0.75 centímetro cúbico water
  • 1 cup bread crumbs, polenta or oats
  • 0.5 cup natural yogurt or 1 egg

Mix the flour with the spices

In the Thermomix bowl, add 1 cup of pea flour, 2 tablespoons of Provençal herbs, 1 dessert spoon of ground paprika and 1 dessert spoon of cumin. Mix for 10 seconds at speed 4.

Add the water and form the dough

With the Thermomix on speed 3, add ¾ cubic centimetre of water little by little until a malleable dough is obtained. Knead for 30 seconds at speed 3.

Shape the nuggets

Remove the dough from the Thermomix and, with your hands, take small portions and shape them into balls. Then, flatten the balls with the palms to form the nuggets. Pinch one of the ends to give them the characteristic shape.

Cook the nuggets

In a pot with boiling water, cook the nuggets for 5-7 minutes. Make sure they are not superimposed on the bottom to prevent them from sticking.

Cool the nuggets

Remove the nuggets from the water with a slotted spoon and set aside to cool.

Prepare the batter

In a dish, lightly beat ½ cup of natural yogurt or 1 egg. In another dish, place 1 cup of bread crumbs, polenta or oats.

Coat the nuggets

Pass the nuggets first through the egg or yogurt and then through the bread crumbs, polenta or oats, making sure they are well covered.

Brown the nuggets

In a frying pan over medium-high heat, brown the nuggets on both sides until golden and crispy. Do not use much oil to keep them healthy.
