Description

These pork rolls with sage and almonds are a tasty and easy to prepare main course, perfect for a family dinner or with friends. The tender meat goes perfectly with the crunchy filling of breadcrumbs, cheese, olives and almonds, all flavored with fresh sage. I often prepare them when I have guests because they are always a success! The preparation is quite quick, especially if you use the Thermomix® to chop the almonds and prepare the filling. A dish rich in Mediterranean flavors and aromas, ideal to enjoy with a side of fresh seasonal vegetables.

Ingredients (13 ingredients)

  • 8 slice pork loin
  • 80 g breadcrumbs
  • 40 g grated cheese
  • 100 ml milk
  • 60 g black olives
  • 50 g almonds
  • 50 g butter
  • 100 ml white wine
  • sage
  • parsley
  • fine salt
  • pepper
  • flour

Preparation (7 steps)

Chop the almonds

Thermomix® Setting

Put 50 g of almonds in the bowl and chop for 5 Sec./speed 5. Remove from the bowl and set aside.

Prepare the filling

Put 80 g of breadcrumbs, 40 g of grated cheese, 100 ml of milk, salt and pepper to taste, parsley to taste in the bowl and mix for 10 Sec./speed 3.

Add olives and almonds

Thermomix® Setting
5 Sec./Speed 2

Add 60 g of black olives cut into rounds and the previously chopped almonds to the mixture. Mix for 5 Sec./speed 2.

Prepare the rolls

Take a slice of meat (8 slices of pork loin), salt it on both sides and put a little filling on top, compacting it with your hands. Roll the meat around the filling and close the ends of the roll with toothpicks. Repeat until the ingredients are finished and keep the rolls aside.

Brown the rolls

In a pan, melt 50 g of butter and then add a few sage leaves. Flour the rolls and then gently cook them. Brown them on all sides, turning them carefully.

Deglaze with wine

Deglaze the rolls with 100 ml of white wine and cook for another 2-3 minutes.

Serve

Transfer the rolls to a serving dish and serve with their sauce.
