Description

This chicken potato casserole is a real comfort food! The chicken breast is marinated in a spicy marinade of olive oil, honey, soy sauce and chili, which makes it particularly tender and aromatic. The potatoes are pre-fried and baked in the oven together with onions, garlic, tomatoes and fresh herbs. The chicken broth ensures a juicy consistency. An ideal dish for a cozy dinner with friends or family. It tastes particularly delicious in autumn, when fresh rosemary and thyme are in season. The dish can be prepared well in advance, so you only have to put it in the oven shortly before eating.

Ingredients (14 ingredients)

  • 3 tbsp Olive oil
  • 1 tbsp Honey
  • 3 tbsp Soy sauce
  • 3 tbsp Chili sauce
  • 1 tsp Cranberries from the jar
  • 3 tbsp Ketchup
  • 500 g Chicken breast fillet(s)
  • 800 g Potato(es) small
  • 1 piece Onion(s) large
  • 2 Zehe/n Garlic
  • 3 piece Tomato(es)
  • 3 Zweig/e Rosemary
  • 1 Zweig/e Thyme
  • 0.25 Liter Chicken broth

Preparation (9 steps)

Prepare marinade

Thermomix® Setting

Add 3 tbsp olive oil, 1 tbsp honey, 3 tbsp soy sauce, 3 tbsp chili sauce, 1 tsp cranberries from the jar and 3 tbsp ketchup to the mixing bowl and stir for 10 sec./level 3.

Marinate chicken

Place the washed and dried 500 g chicken breast fillets in a bowl and pour the marinade from the mixing bowl over them. Marinate in the refrigerator for at least 1 hour, or preferably overnight.

Prepare potatoes

Peel 800 g small potatoes and halve larger tubers.

Fry potatoes

Fry the prepared potatoes in a pan with olive oil for about 10 minutes until brown on all sides. Then place in a casserole dish coated with olive oil.

Prepare onions and garlic

Peel, halve and cut 1 large onion into rings. Peel and finely chop 2 cloves of garlic.

Chop herbs

Wash and chop 1 sprig of thyme and 1 sprig of rosemary.

Sauté onions, garlic and herbs

Sauté the onions, garlic and chopped herbs in the frying fat of the potatoes and then pour over the potatoes in the casserole dish.

Place meat on top and bake

Place the marinated meat with the marinade on the potatoes and bake everything in a preheated oven at 200 °C top/bottom heat for approx. 15 minutes.

Pour in broth and finish cooking

Pour in 0.25 liters of hot chicken broth, spread 3 tomatoes and two rosemary sprigs in the casserole and cook in the oven for another 20 - 30 minutes.
