Description

These homemade strozzapreti, topped with a rich tomato sauce and garnished with fresh mushrooms, are a true Italian delight. The dough, prepared with love, offers a unique texture that pairs wonderfully with the sauce. I love preparing this dish for a friendly dinner with friends or family. The flavor of the mushrooms, combined with the sweetness of the tomato, makes it a comforting and tasty dish. The preparation takes a bit of time, but the result is really worth it. A little grated parmesan for the final touch and it's a treat!

Ingredients (9 ingredients)

  • 400 g white wheat flour (T55)
  • 200 ml water
  • 4 pinch salt or fine salt
  • 400 g tomato pulp
  • 1 piece onion
  • 1 cuillère olive oil
  • to taste Salt or fine salt
  • 100 g grated parmesan
  • 600 g mushrooms

Preparation of the strozzapreti dough

Thermomix® Setting
3 min/Kneading speed

Put 400 g of white wheat flour (T55), 200 ml of water and 4 pinches of salt in the Thermomix bowl. Knead for 3 Min./Knetstufe.

Dough rest

Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Shaping the strozzapreti

After resting, spread the dough thinly and cut strips about 1 cm wide. Roll each strip between your hands to form the strozzapreti. Set aside.

Preparation of the sugo sauce

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 1 onion in the Thermomix bowl and chop 3 Sek./Stufe 5. Add 1 tablespoon of olive oil and cook 3 Min./120°C/Stufe 1.

Cooking the tomato sauce

Thermomix® Setting
20 min/212°F/Speed 2 100

Add 400 g of tomato pulp and salt to taste. Cook 20 Min./100°C/Stufe 2.

Preparation of the mushrooms

Thermomix® Setting
10 min/212°F/Linkslauf Speed 1 100 Reverse

Clean and cut 600 g of mushrooms. Add them to the tomato sauce and cook 10 Min./100°C/Linkslauf Stufe 1.

Cooking the pasta

Meanwhile, bring salted water to a boil in a saucepan and cook the strozzapreti until they are al dente.

Assembly and service

Drain the pasta and add it to the sauce. Mix gently. Serve immediately with grated parmesan.
