Description

This Thermomix® recipe for kohlrabi carpaccio with salad and strawberries is a fresh and light appetizer. The main ingredients are kohlrabi, strawberries, cucumber and leafy greens, refined with white balsamic vinegar. Preparation in the Thermomix® takes about 30 minutes and yields 4 servings. Ideal for light, vegetarian summer cuisine and anyone who enjoys a healthy salad.

Ingredients (12 ingredients)

  • 1 Stück Kohlrabi
  • 2 Stück Kohlrabi
  • 1 Stück Cucumber
  • 4 Stück Strawberries
  • 5 Stück Strawberries
  • 1 Versuch Leafy greens (lettuce, lolo, frisée, oak leaf arugula, wild garlic, etc.)
  • 1 dl White balsamic vinegar without sugar
  • 4 Stück Basil leaves
  • 2 TL Mustard without sugar (Dijon)
  • Rock salt
  • Pepper
  • 2 dl Fat-free vegetable broth

Preparation (7 steps)

Prepare kohlrabi

Peel the kohlrabi, cut into thin slices with a slicer or by hand and cut out rounds with a cookie cutter.

Prepare cucumber

Peel the cucumber lengthwise into thin slices and form into an open roll.

Prepare leafy greens

Wash and prepare the leafy greens.

Chop basil

Put 4 basil leaves in the mixing bowl and chop.

Mix sauce ingredients

Put 1 dl white balsamic vinegar without sugar, chopped basil leaves, 2 tsp mustard without sugar (Dijon), rock salt and pepper, 2 dl fat-free vegetable broth in the mixing bowl.

Dice strawberries

Dice strawberries very small.

Arrange

Arrange kohlrabi rounds as carpaccio on 4 plates in a flower-like shape. Place the cucumber roll in the middle of the plate on the carpaccio. Place leafy greens as small bouquets in the open cucumber roll. Distribute ⅔ of the sauce over the kohlrabi, the rest over the cucumber basket. Distribute the strawberries over the kohlrabi.
