Description

This creamy black salsify soup with oyster mushrooms and cress is a delicious and seasonal dish. The soup is prepared in the Thermomix® and garnished with fried mushrooms and fresh cress. It is vegetarian and is ideal as an appetizer or light main course. The preparation time is about 45 minutes and yields 4 servings.

  • 4 EL light balsamic vinegar
  • 2 EL Flour
  • 1000 g Black salsify
  • 2 Stück Onions
  • 1 Zehe Garlic
  • 3 EL Oil
  • 750 ml Vegetable broth
  • 500 ml Milk
  • 0.5 Stück Juice of lemon
  • 1 TL Cayenne pepper
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 Beet Purple cress

Preparation (9 steps)

Preparing the black salsify

Fill a large bowl with cold water, stir in 3 tbsp light balsamic vinegar and flour. Thoroughly scrub the black salsify under running cold water. Peel the black salsify, cut off the ends and place directly in the flour water to prevent discoloration.

Chop onions and garlic

Peel and quarter the onions and place them in the mixing bowl together with the clove of garlic. Chop for 3 sec/speed 5. Use the spatula to scrape everything down from the edge.

Sauté onions and garlic

Add 3 tbsp oil and sauté for 3 min/120°C/speed 1.

Add and sauté black salsify

Cut the black salsify into pieces, add to the mixing bowl and sauté for 2 min/120°C/speed 1.

Cook soup

Add vegetable broth and simmer for 15 min/100°C/speed 1.

Refine soup

Add milk, lemon juice and 1 tbsp light balsamic vinegar, cayenne pepper, salt and pepper and heat for 5 min/90°C/speed 1.

Puree soup

30 sec/Speed 8-10

Puree the soup for 30 sec/speed 8-10, slowly increasing the speed.

Fry oyster mushrooms

Coarsely chop the mushrooms. Heat 1 tbsp oil in a pan and sear the oyster mushrooms in it for 1-2 minutes on each side. Season with salt and pepper.

Arrange and serve

Cut the cress from the patch. Arrange the soup in bowls, garnish with mushrooms and cress and serve.
