Description

This country-style chicken stew is a heartwarming dish, perfect for autumn evenings. The tender meat, sweet peppers and caramelized onions melt into a rich and flavorful sauce, enriched by the aroma of rosemary and paprika. I often prepare it when I want comfort food that reminds me of the flavors of home. It is prepared simply and quickly, ideal for a family lunch or a dinner with friends. Serve it with toasted bread, white rice or polenta for a complete and satisfying meal. A real hug on a plate!

Ingredients (10 ingredients)

  • 1 piece Chicken
  • 2 tbsp Tomato paste
  • 250 ml Vegetable broth
  • 1 piece Onions
  • 30 ml Sunflower seed oil
  • 2 piece Peppers
  • 1 pinch White pepper
  • 1 tsp Sweet paprika
  • 1 bunch Rosemary
  • 1 pinch Salt

Preparation (7 steps)

Initial preparation of the vegetables

Clean the peppers by removing the seeds and white filaments, then cut them into coarse pieces. Also coarsely chop the onion.

Browning the chicken

In a pan, brown the chicken in a drizzle of sunflower seed oil for a few minutes per side, until it changes color and becomes golden.

Preparation of the sauté in the Thermomix

Thermomix® Setting

Transfer the chopped onions into the Thermomix bowl. Add 20 ml of sunflower seed oil and chop for 3 Sec./Stufe 5. Then, sauté for 3 Min./120°C/Stufe 1.

Adding the peppers and rosemary

Add the chopped peppers, a sprig of rosemary, a teaspoon of sweet paprika, salt and white pepper to the bowl. Mix for 5 Sec./Stufe 4.

Preparation of the tomato paste

Transfer 50 ml of vegetable broth into a small bowl and dissolve 2 tablespoons of tomato paste in it. Add this solution to the bowl.

Cooking the stew

50 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the browned chicken to the bowl. Pour in 200 ml of hot vegetable broth. Cook for 50 Min./100°C/Stufe 1/Linkslauf.

Final adjustment and serving

Check the chicken for doneness and the flavor of the sauce. Add more broth if necessary. Serve the chicken stew hot, accompanied by toasted bread, white rice, potatoes or polenta.
