Description

I love this recipe for spaghetti with avocado sauce! It's a simple, quick dish full of fresh flavors. The creamy avocado goes perfectly with the acidity of the lemon and the sweetness of the cherry tomatoes. Perfect for a light lunch or an impromptu dinner. Plus, it's a great way to get kids (and adults!) to eat vegetables. You can easily add other ingredients like grilled shrimp or chicken for a more substantial version. A real treat, ready in a flash with the Thermomix®!

Ingredients (10 ingredients)

  • 320 g spaghetti
  • 2 piece avocados
  • 2 piece shallots
  • 1 piece lemon
  • 1 clove garlic
  • 1 poignée cherry tomato
  • 3 tiges parsley
  • 6 cl olive oil
  • Salt or fine salt
  • Mill pepper

Preparation of the avocado sauce

20 sec/Speed 8

Peel and pit the avocados, cut the flesh into pieces and put them in the Thermomix bowl. Peel the garlic and shallots, cut them in half and add them to the bowl with the avocado. Add the parsley stems, freshly squeezed lemon juice and olive oil. Mix everything for 20 Sec./Stufe 8 until you obtain a smooth cream. Pour the sauce into a salad bowl.

Cooking the spaghetti

10 min/212°F/Speed 1 100

Pour 1 liter of water into the Thermomix bowl. Add a pinch of salt. Heat the water for 10 Min./100°C/Stufe 1.

Adding pasta and cooking

8-10 min/212°F/Linkslauf Speed 1 100 Reverse

Add the spaghetti to the Thermomix bowl. Program the cooking time indicated on the package (about 8 to 10 minutes) /100°C/Linkslauf Stufe 1. During cooking, scoop out 10 cl of cooking water with a ladle and pour it into the avocado sauce.

Mixing and serving

As soon as the pasta is cooked, drain it and pour it into the salad bowl containing the avocado sauce. Mix gently. If necessary, add a little cooking water, salt and pepper to your liking. Add the halved cherry tomatoes and sprinkle with chopped parsley. Serve hot.
