Description

These chocolate nut brownies are a poem! I love baking them because they are so juicy and chocolatey. The hazelnuts give the whole thing a great crunch. Perfect for afternoon coffee or as a sweet surprise for birthdays. The recipe is super easy and succeeds with the Thermomix® in no time. If you like it even more intense, you can add a shot of espresso to the dough. An absolute must for all chocolate lovers!

Ingredients (9 ingredients)

  • 70 g Hazelnuts
  • 8 piece Eggs
  • 200 g Sugar
  • 200 g Coating bittersweet
  • 220 g Margarine half fat
  • 400 g Flour
  • 40 g Cocoa powder
  • 1 Pck. Baking powder
  • 1 etwas Rum flavoring

Preparation (8 steps)

Grind hazelnuts

Thermomix® Setting
15 sec/Speed 7

Place 70 g of hazelnuts in the mixing bowl and grind finely for 15 sec/speed 7. Transfer and set aside.

Beat eggs and sugar

Thermomix® Setting
1 min/Speed 5

Place 8 eggs and 200 g of sugar in the mixing bowl and beat until creamy for 1 min/speed 5. Transfer and set aside. Rinse the mixing bowl.

Chop coating

Thermomix® Setting
8 sec/Speed 6

Place 200 g of bittersweet couverture in the mixing bowl and chop for 8 sec/speed 6. Transfer half of it to a bowl and set aside.

Melt coating and margarine

Thermomix® Setting
4 min/122°F/Speed 2 50

Add 220 g of half-fat margarine to the coating in the mixing bowl and melt for 4 min/50°C/speed 2.

Stir in the egg-sugar mixture

Thermomix® Setting
20 sec/Speed 4

Add the egg-sugar mixture to the melted coating in the mixing bowl and stir for 20 sec/speed 4.

Mix in dry ingredients

Add 400 g flour, 1 packet of baking powder, 40 g cocoa powder and the ground hazelnuts to the mixing bowl and mix again for 20 sec/speed 4.

Fold in coating and flavoring

Thermomix® Setting
10 sec/Speed 4

Finally, add the remaining pieces of coating and a few drops of rum flavoring to the mixing bowl and fold in for 10 sec/speed 4.

Bake

Spread the dough on a baking tray lined with baking paper and bake in a preheated oven at 180°C on the middle rack for 25 to 30 minutes.
