Description

Filo pastry flowers with vegetables are a vegetarian finger food that is easily prepared with the Thermomix®. The main ingredients are filo pastry, celeriac, beetroot, zucchini and sweet potato. Preparation takes about 60 minutes and yields 12 servings. The recipe is ideal as a snack for parties or as a festive appetizer, especially in winter.

Ingredients (14 ingredients)

  • 4 Blätter Filo pastry (frozen)
  • 0.25 Celeriac
  • 1 Kugel(n) Beetroot
  • 1 Zucchini
  • 0.5 Sweet potato
  • 1 Clove of garlic
  • 1 Red onion
  • 2 Eggs (size M)
  • 150 g Sour cream
  • 50 g Grated Parmesan
  • Salt
  • Pepper
  • Nutmeg
  • 100 g Butter

Preparation (7 steps)

Prepare vegetables

Let the filo pastry thaw. Wash the celeriac, beetroot, zucchini and sweet potato, peel if necessary and cut into thin slices. Briefly blanch the vegetables so that they are easier to shape. Blanching is done outside of the Thermomix.

Chop garlic and onion

Peel 1 clove of garlic and 1 red onion and place in the mixing bowl. Chop for 3 sec./speed 7.

Prepare cream

Add 2 eggs (size M), 150 g sour cream, 50 g grated Parmesan, salt, pepper and nutmeg to the garlic and onion in the mixing bowl. Mix for 20 sec./speed 3.

Melt butter

Thermomix® Setting
3 min/122°F/Speed 1 50

Put 100 g butter in the mixing bowl and melt for 3 min./50°C/speed 1, letting it brown slightly.

Prepare filo pastry

Spread out the filo pastry and use a knife to cut out 36 squares (approx. 10 x 10 cm). Remove the melted butter from the mixing bowl and brush the pieces of dough with it. Layer 3 pieces of dough on top of each other. Cut the pieces of dough at one corner towards the middle and distribute them in the 12 wells of a muffin tin on a piece of baking paper.

Fill tartlets

Spread approx. 1.5 tbsp of cream into each well. Insert vegetable slices from the outside in a circular shape, so that a flower is created.

Bake tartlets

Bake the prepared filo pastry tartlets in a preheated oven (electric oven: 200 °C/convection oven: 175 °C) for approx. 20 minutes. This step is done outside of the Thermomix.
