Description

This spaghetti salad with curry is a vegetarian main course that is quick to prepare in the Thermomix®. The main ingredients are spaghetti, bell peppers, ginger, and a curry sauce with soy sauce and lemon juice. In just 20 minutes, you can create a delicious pasta salad for 4 servings. Ideal for make-ahead parties, as a light lunch, or for a quick family meal in the summer.

Ingredients (11 ingredients)

  • 1.5 TL Salt
  • 500 g Spaghetti
  • 1 cm Ginger
  • 3 Stück Red bell peppers, in pieces
  • 80 g Sugar
  • 80 g Oil
  • 80 g Lemon juice
  • 20 g Soy sauce
  • 5 TL Curry powder
  • 2 Prisen Pepper
  • 45 g Spring onions, in rings

Preparation (5 steps)

Cook spaghetti

Bring plenty of salted water to a boil in a large pot and cook the spaghetti al dente. Then drain and rinse with cold water.

Chop ginger

Place 1 cm of ginger in the mixing bowl and chop for 2 sec./speed 5. Use the spatula to scrape down the sides.

Chop bell peppers

Add 3 red bell peppers in pieces and chop for 3 sec./speed 4. Use the spatula to scrape down the sides.

Prepare the sauce

Add 80 g lemon juice, 20 g soy sauce, 5 tsp curry powder, 2 pinches of pepper, 80 g sugar and 80 g oil and mix for 10 sec./speed 3.

Mix spaghetti and sauce

Drain the spaghetti, rinse with cold water and mix with the sauce and 45 g spring onions in rings. Refrigerate until serving.
